Creamy Canned Clam Chowder

Creamy canned clam chowder poured on top of a baked potato that is sitting in a white bowl. The dish is garnished with crisp bacon and fresh parsley.

If you’re craving a rich, comforting soup that’s quick to make, this Creamy Canned Clam Chowder is just what you need. Using canned clams makes it incredibly convenient, without sacrificing flavor. This chowder comes together in just under 45 minutes, with the perfect balance of salty bacon, tender potatoes, and creamy broth.

No, your eyes aren’t playing tricks on you! In a twist on chowder fries, I poured this creamy clam chowder over a crispy baked potato. Bake the potato, slice open, add a bit of butter, and then ladle the chowder on top!

Why You Will Love This Canned Clam Chowder Recipe

  • Convenient & Quick: Using canned clams and clam juice, this chowder comes together effortlessly, and is ready in under 45 minutes.
  • Creamy & Flavorful: The combination of heavy cream and bacon fat creates a smooth, rich texture that’s both comforting and satisfying.
  • Simple Ingredients: You probably already have most of these ingredients in your pantry, making it easy to whip up whenever you need a warm, hearty meal.
  • Customizable: With ingredient substitutions and additions, you can make this Canned Clam Chowder recipe your own, whether you’re serving it on a chilly evening or for a casual gathering.
  • Perfect for Any Occasion: Whether it’s a weeknight dinner or part of a special meal, this clam chowder is a versatile option.

Ingredient Substitutions

  • Canned Clams: If you don’t have canned clams, fresh clams can be substituted. Just be sure to add extra clam juice and water to make up for the difference in liquid.
  • Bacon: If you prefer a vegetarian option, you can skip the bacon and use olive oil or butter for sautéing the vegetables.
  • Potatoes: Yukon gold potatoes are ideal for their creamy texture, but you can use Russet or red potatoes, if preferred.
  • Heavy Cream: For a lighter version, swap the heavy cream for half-and-half or whole milk, though the chowder will be a bit thinner.
  • Thyme: If you don’t have fresh thyme, dried thyme works well. Use about one teaspoon of dried thyme for the same flavor.

How to Serve and Store Leftovers

  • Serve this clam chowder with a side of crusty bread or crackers for dipping. You can also enjoy it poured into a bread bowl, or on like I did, on top of a baked potato.
  • Store any leftover clam chowder in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop over low heat, adding a little more water or cream to thin it out, if needed.

Frequently Asked Questions

  • Can I use frozen clams instead of canned? Yes! If using frozen clams, make sure to thaw them before adding to the soup. You’ll need to add extra clam juice to make up for the missing liquid.
  • Can I make this chowder ahead of time? Absolutely! In fact, clam chowder tastes even better the next day after the flavors have had time to meld. Simply store it in the fridge, and reheat it gently before serving.
  • Can I make this dairy-free? Yes, you can substitute the heavy cream with coconut cream or a dairy-free cream alternative for a dairy-free version. Use a non-dairy butter for sautéing the vegetables.

Description

If you’re craving a rich, comforting soup that’s quick to make, this Creamy Canned Clam Chowder recipe is just what you need.

Ingredients

Units Scale
  • 5 cans chopped clams, plus the juice
  • 1 bottle clam juice
  • 1 bottle water
  • 6 thick-cut bacon strips, diced
  • 1/4 white or yellow onion, minced
  • 1 stalk celery, minced
  • 3 garlic cloves, minced
  • 23 Yukon gold potatoes, peeled and tiny diced
  • 2 tablespoons fresh thyme
  • 1/3 cup flour
  • 3/4 cup heavy cream
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley, plus more for garnish
  • Cracked black pepper, for garnish

Instructions

  1. Open the canned clams, drain, and reserve the liquid. Set aside.
  2. In a heavy-bottom pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set it aside. Reserve about 2 tablespoons of the bacon fat in the pot.
  3. Add the minced celery and onion to the bacon fat in the pot. Sauté for about 3 minutes until softened.
  4. Stir in the minced garlic, diced potatoes, and fresh thyme. Season with salt and pepper. Toss the vegetables in the bacon fat to coat evenly.
  5. Sprinkle the flour over the vegetables and cook for a few minutes to allow the raw flour taste to cook off.
  6. Pour in the reserved clam juice, bottled clam juice, and water. Bring almost to a boil, then reduce heat and simmer for 15 minutes, until the potatoes are tender.
  7. Stir in the heavy cream and allow it to simmer for another 5 minutes to thicken.
  8. Turn off the heat and stir in the clams and fresh parsley.
  9. Ladle into soup crocks and garnish with crisp bacon, fresh parsley, and cracked black pepper.
  10. ENJOY!

Equipment

Notes

  • If you’d like a thicker chowder, simply add a bit more flour when cooking the vegetables or let the soup simmer a bit longer to reduce the liquid.
  • Store leftover clam chowder in an airtight container in the fridge for up to 3 days.
  • Reheat on the stovetop over low heat, adding a little more cream or water to thin it out, as needed.
  • While chowder can be frozen, it’s best to freeze it without the clams, as they may become tough when thawed. Add the clams when reheating.
  • Serve with crusty bread or crackers for dipping, or top it over a baked potato like I did for a fun twist!
  • Nutrition information does NOT include the baked potato.

Chicken Orzo Soup

A bowl of chicken and orzo soup. The soup is tomato-based and is garnished with fresh basil and grated Parmesan cheese.

This Chicken Orzo Soup is the perfect combination of hearty, cozy, and comforting. Tender bites of seasoned chicken are simmered with orzo, crushed tomatoes, aromatics, and herbs, then finished with fresh basil, a drizzle of olive oil, and a generous sprinkle of Parmesan cheese. It’s a quick and easy one-pot dinner that feels like a warm hug in a bowl.

Why You Will Love This Chicken Orzo Soup Recipe

  • One-Pot Wonder: This easy chicken orzo soup recipe comes together in one pot for minimal cleanup.
  • Weeknight-Friendly: Made with simple pantry ingredients, this hearty soup is ready in about 35 minutes.
  • Loaded with Flavor: The chicken is seasoned and seared for depth, while garlic, tomato paste, and fresh herbs give the broth a rich, savory base.
  • Comforting Yet Light: The orzo makes it feel hearty, while the tomato base keeps it fresh and vibrant.
  • Perfect Make-Ahead Meal: The flavors of this chicken orzo soup only get better the next day, making it great for meal prep or leftovers.

Ingredients and Substitutions

  • Chicken breasts: Use boneless chicken thighs, or leftover rotisserie chicken.
  • Orzo: Substitute with small pasta like ditalini or acini di pepe, or use rice for a gluten-free option.
  • Crushed tomatoes: Swap with diced tomatoes for more texture or tomato purée for a smoother broth.
  • Tomato paste: Can be omitted, or replaced with 1/4 cup marinara sauce.
  • Chicken stock: Use vegetable stock for a lighter flavor, or bone broth for added richness.
  • Fresh herbs: Although fresh is best, dried basil and parsley can be used (reduce to one teaspoon each).
  • Spinach: Fresh baby spinach would make for a great addition. Stir in at the end and allow to wilt, slightly.
  • Beans: For added protein, consider adding cannellini beans.

How to Serve and Store

To Serve:

  • Ladle the chicken orzo soup into bowls and finish with:
    • A drizzle of high-quality olive oil
    • Freshly grated Parmesan cheese
    • Extra chopped basil or parsley for a pop of color and freshness
  • Serve with crusty bread, garlic toast, or a simple side salad to make it a full meal.
  • For added richness, a dollop of pesto or a swirl of cream can be stirred in just before serving.

To Store Leftovers:

  • Refrigerate: Store any leftovers in an airtight container in the fridge for up to 3–4 days.
  • Reheat: Warm the chicken orzo soup gently on the stovetop over low to medium heat. Add a splash of water or broth to loosen the soup if it has thickened.
  • Note on Orzo: Orzo will continue to absorb liquid as it sits, so the soup will thicken. If making ahead, consider cooking the orzo separately and adding it just before serving.
  • Freezing: Not recommended as the orzo becomes mushy when thawed and reheated. For best results, enjoy fresh or within a few days.

Frequently Asked Questions

  • Can I use pre-cooked chicken? Yes, just skip the searing step and add the diced, cooked chicken when you add the broth.
  • Does this soup freeze well? This chicken orzo soup is best enjoyed fresh, or within a few days. Orzo tends to absorb the broth and become mushy when frozen.
  • How do I make it spicier? Increase the crushed red pepper or add a dash of hot sauce when serving.
  • Is this soup gluten-free? Not as written, but you can easily make it gluten-free by swapping the orzo for rice or gluten-free pasta.
  • Can I make this vegetarian? Yes! Skip the chicken and use vegetable stock. Add a can of white beans or chickpeas for protein.

It’s a quick and easy one-pot dinner that feels like a warm hug in a bowl.

Ingredients

Units Scale

For the Chicken and Seasoning:

  • 2 boneless chicken breasts
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons paprika

For the Soup:

  • 2 tablespoons olive oil, divided
  • 1 stalk celery, minced
  • 1/4 white onion, minced
  • 3 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 cup dried orzo
  • 1 1/2 cups crushed tomatoes
  • 1/2 teaspoon crushed red pepper – optional for heat
  • 4 cups chicken stock
  • 1 1/2 cups water
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped, plus more for garnish
  • Olive oil, for drizzling
  • Freshly grated Parmesan cheese, for serving

Instructions

  1. In a small bowl, combine the salt, pepper, garlic powder, onion powder, and paprika.
  2. Pat the chicken breasts dry and season both sides with the spice mixture.
  3. Heat one tablespoon of olive oil in a heavy-bottom pot over medium-high heat. Sear the chicken breasts on both sides, until golden (you are not fully cooking the chicken at this stage). Remove and dice into bite-sized pieces.
  4. In the same pot, add the remaining tablespoon of olive oil, garlic, onion, and celery. Sauté for about 2 minutes.
  5. Stir in the tomato paste and cook for another 2 minutes.
  6. Add in the dried orzo and season with a pinch of salt and pepper. Stir in the crushed red pepper flakes, if using.
  7. Add the diced chicken back to the pot, along with the crushed tomatoes, chicken stock, and water.
  8. Cover and simmer for 20–25 minutes, stirring occasionally to prevent the orzo from sticking.

  10. Ladle into bowls, drizzle with olive oil, and top with freshly grated Parmesan and more basil.
  11. ENJOY!

Notes

  • Searing the chicken first adds tons of flavor. Don’t skip this step!
  • Store any excess seasoning blend in a sealed jar for up to 6 months.
  • Stir frequently while simmering to prevent the orzo from sticking.
  • Taste for salt once the chicken and pasta are cooked.
  • Use fresh herbs for the best flavor, especially basil.
  • Drizzle each bowl with good olive oil and freshly grated Parmesan before serving.
  • If making ahead, store the pasta separately to avoid over-absorption.

  • Rotisserie Chicken: I only use white meat, but feel free to incorporate a little dark meat. Grilled chicken strips, or even turkey are great substitutes.

  • Fresh Baby Spinach: Possible substitutes include; kale, Swiss chard or even frozen spinach.
  • Chicken Stock: Vegetable broth or stock can be used instead.
  • Thyme: If you do not have fresh, use dried thyme. Rosemary is also a great addition/substitution.
  • Vegetables: In addition, add leeks, carrots, bell peppers and/or fennel.
  • Seasonings: Chili powder or cumin would be great additions.
  • Pasta: Pasta is a great addition. Use only one can of cannellini beans and add 1/2-3/4 cup dried pasta when the stock comes to a boil.

How to Make This Easy Homemade Soup with Rotisserie Chicken

  1. Begin by heating the olive oil and butter in a large pot over medium heat.
  2. Add the minced onions, garlic, and celery to the pot, and sprinkle in the salt, pepper, garlic powder, onion powder, and paprika. Sauté for 3 to 4 minutes until the vegetables are tender and fragrant.
  3. Pour in the chicken stock, add the bay leaves, and toss in the fresh thyme. Bring the mixture to a boil, then reduce the heat and simmer for 8-10 minutes, to allow the flavors to meld.
  4. Once simmered, remove and discard the bay leaves and woody stems of the thyme.
  5. Next, add the diced rotisserie chicken, cannellini beans, and fresh baby spinach. Let the soup cook for a few additional minutes to warm the chicken and beans through, and to wilt the spinach.
  6. Squeeze in the lemon juice to brighten the flavors.

Why Make this Pasta Meatball Soup

  • Comforting and Convenient: This Easy Creamy Meatball Soup is perfect for cozy nights or chilly evenings. It’s the perfect bowl of goodness to serve on a weeknight.
  • Simple Yet Flavorful: With straightforward instructions and easily accessible ingredients, this soup guarantees a deliciously satisfying meal.
  • Versatile and Family-Friendly: Whether for a quick family dinner or a casual gathering, this Italian Sausage Meatball Soup with a Creamy Tomato Base can be customized to yours and your family’s liking.

Ingredients for Easy Creamy Meatball Soup

This Hearty Soup recipe calls for a number of ingredients you probably already have in your pantry, or fridge. Feel free to use whatever pasta shape you have on hand.

  • Italian Sausage: Use mild, sweet or hot Italian sausage. Ground beef, ground pork or even ground chicken or turkey are great substitutions. If using an alternative, season well to mimic the flavorful sausage. (Store-bought meatballs can also be used for a quicker preparation).
  • Pasta: Any small pasta shape, tortellini or small ravioli will make for great substitutions.
  • Crushed Tomatoes: Substitute with whole tomatoes that you can crush before adding to the soup. Diced tomatoes will also work well in this family-friendly soup recipe.
  • Parmesan Cheese: Freshly grated Parmesan cheese adds a rich and savory taste. You can substitute it with Pecorino Romano or Grana Padano for a similar nutty, and sharp flavor.
  • Tomato Paste: Tomato paste enhances the depth of the soup’s flavor. If needed, you can substitute it with an equal amount of tomato sauce, although the concentration of flavor might be slightly different.
  • Chicken Stock: Chicken stock serves as the base of the soup. Vegetable broth or stock is a great substitution.
  • Heavy Whipping Cream: The heavy cream provides richness and creaminess to the soup. If desired, you can substitute it with half-and-half for a slightly lighter option, or choose a dairy-free alternative.
  • Baby Spinach: Fresh baby spinach adds a pop of color and nutrients to the soup. If preferred, you can use chopped kale or Swiss chard as substitutes for spinach.
  • Fresh Basil and Parsley: Fresh herbs like basil and parsley contribute to the soup’s freshness and aroma. In place of fresh herbs, you can use dried ones, adjusting the quantity (usually 1 teaspoon of dried herbs for every tablespoon of fresh herbs).

How to Make Meatball Soup

Crafting this Easy Creamy Meatball Soup is a breeze, requiring simple steps and basic ingredients:

  1. Combine all of the ingredients for the meatballs in a bowl. Do not over mix. Shape into 1″ meatballs.
  2. In a deep pot, heat the olive oil. Add the meatballs in batches, browning them on all sides until cooked through. Once all of the meatballs have been cooked, reserve on a plate.
  3. Drain all but a tablespoon of the grease from the pot.
  4. Add minced celery, carrot, onion and garlic to the pot. Season with salt and pepper. Sauté for a few minutes to soften.
  5.  Stir in the tomato paste. Toast for a minute.
  6. Add in the crushed tomatoes, stock, bay leaves, Italian seasoning and Parmesan rind (if you have one). Season with just a pinch of salt.
  7. Bring the mixture almost to a boil. Turn down the heat and simmer for 15-20 minutes.
  8. Once simmered, remove and discard the bay leaves and Parmesan rind.
  9. Turn up the heat, add in the dried pasta. Cook the pasta just before al dente, stirring often to ensure the pasta does not stick to the bottom.
  10. Reduce the heat. Pour in the heavy whipping cream. Add in the Parmesan cheese. Stir. Cook for another minute.
  11. Add in the reserved meatballs, fresh spinach, basil and parsley.
  12. Cook just long enough to wilt the spinach and warm up the meatballs.
  13. Ladle into bowls sprinkled with freshly grated Parmesan cheese.

Tips on Making the Best Pasta Meatball Soup

  • When preparing the meatballs, avoid over mixing to maintain their tenderness and texture.
  • If substituting with ground meat of your choice, season the meat well. Also, add 1/4 cup of breadcrumbs and a beaten egg to bind.
  • Yes, you can use store-bought meatballs instead of making your own.
  • Cook the meatballs in batches to ensure even browning and to develop a flavorful crust.
  • Sauté celery, carrots, onions, and garlic before adding liquids to enhance the overall flavor of the soup.
  • Toasting the tomato paste intensifies the flavor.
  • Allow the soup to simmer after adding tomatoes, stock, and seasonings to blend the flavors together.
  • You can use any pasta variety you have on hand, such as penne, fusilli, or shells, adjusting cooking times as needed.
  • If you don’t have crushed tomatoes, tomato sauce or diced tomatoes can be a great alternative, adjusting the texture by blending or simmering longer.
  • For added protein and texture, consider adding cannellini beans to the soup for a heartier dish, stirring them in towards the end of cooking.
  • Add fresh spinach, basil, and parsley at the end of cooking to retain their color, flavor, and nutrients.

How to Serve and Store Meatball Soup

This hearty meatball soup can be served alone, or pair with any of the following for a complete meal:

  • Bread or Rolls
  • Mixed Green or Light Side Salad.
  • Grilled Cheese
  • Bruschetta or Crostini
  • Vegetable Platter

  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

FOR THE SOUP:

  • 2 tablespoons olive oil
  • 1 celery stalk, minced
  • 1 small carrot, minced
  • 3 garlic cloves, minced
  • 1/2 white or yellow onion, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon tomato paste
  • 28-ounces crushed tomatoes
  • 4 1/2 cups chicken stock
  • 2 teaspoons Italian seasoning
  • 2 bay leaves

  • 1 tablespoon fresh chopped parsley

Instructions

  14. ENJOY!

Notes

  • When preparing the meatballs, avoid over mixing to maintain their tenderness and texture.
  • If substituting with ground meat of your choice, season the meat well. Also, add 1/4 cup of breadcrumbs and a beaten egg to bind.
  • For a quicker preparation, feel free to use store-bought, frozen or fresh meatballs.
  • If there seems to not be enough liquid, add in additional stock or broth.
  • For added protein and texture, consider adding cannellini beans to the soup for a heartier dish, stirring them in towards the end of cooking.
  • Add fresh spinach, basil, and parsley at the end of cooking to retain their color, flavor, and nutrients.
  • Ladle the soup in bowls and top each serving with an extra sprinkle of Parmesan cheese for added flavor.
  • Allow the soup to cool completely before transferring it to an airtight container. Store in the refrigerator for up to 3-4 days.
  • If freezing, considering not adding the pasta to the soup as the texture of the pasta can change significantly up freezing. Portion the cooled soup into freezer-safe containers, leaving some space for expansion. Freeze for up to 2-3 months. Thaw in the refrigerator before reheating.

  • Minimal Effort, Maximum Flavor: This recipe relies on a handful of simple yet flavorful ingredients like hot Italian sausage, cherry tomatoes, and store-bought tortellini.

  • Customizable and Adaptable: While this recipe is delicious as is, it’s also highly adaptable to your preferences. Feel free to customize it by adding extra vegetables, different types of sausage, or varying the level of spiciness to suit your taste.

INGREDIENTS TO MAKE SAUSAGE TORTELLINI SOUP

  • Hot Sausage – Link sausage tends to have more flavor than bulk. Just be sure to remove the casing. For a milder flavor, substitute with mild or sweet Italian sausage, ground beef, ground turkey, or a plant-based meat alternative to make this a vegetarian tortellini soup (of course, replace the chicken stock with vegetable stock).
  • Cheese Tortellini – Store bought refrigerated or frozen cheese tortellini will work in this one-pot soup recipe. However, feel free to use your favorite variety, or if time allows, make homemade tortellini. Mini ravioli or gnocchi are also great substitutes. If you have dietary restrictions, consider using gluten-free tortellini.
  • Cherry Tomatoes – Fresh is best, but canned, crushed or diced tomatoes are great substitutes.
  • Heavy Cream – Leave out for a healthier, lighter version of this cheese tortellini soup. If leaving out, add a touch more broth to compensate for the liquid.
  • Spinach – Chopped kale is a great substitute.

INSTRUCTIONS ON HOW TO MAKE TORTELLINI SOUP

  1. In a large pot, cook the hot Italian sausage over medium-high heat, breaking it into crumbles until it’s browned and almost cooked through. Remove any excess fat.
  2. Add the minced onion, garlic, carrots, and celery to the pot. Sauté for 3-4 minutes or until the vegetables are tender.
  3. Stir in the halved cherry tomatoes. Season with salt and pepper. Continue to cook for another 5 minutes until the tomatoes start to break down.
  4. Season with Italian seasoning.
  5. Pour in the chicken broth. Add in the bay leaves and Parmesan rind. Allow to simmer for about 5 minutes. Turn up the heat to a heavy simmer.
  6. Add the store-bought tortellini and cook for an additional 2 -3 minutes.
  7. Remove the bay leaves and Parmesan rind.
  8. Pour in the heavy whipping cream and stir in the fresh spinach leaves and let them wilt into the soup.
  9. Serve the Sausage Cheese Tortellini Soup hot, garnished with freshly grated Parmesan cheese.

HOW TO SERVE AND SAUSAGE CHEESE TORTELLINI SOUP

This Sausage Tortellini Soup pairs wonderfully with a side of crusty bread or a simple green salad. It’s a complete meal on its own, but you can also serve it as a starter for a more elaborate dinner spread.

If you have leftovers (though it’s so tasty, that might not be the case), allow the Sausage Cheese Tortellini Soup to cool to room temperature. Store it in an airtight container in the refrigerator for up to 3 days. When reheating, you may need to add a splash of chicken broth to maintain the desired consistency.

Alternatively, freeze up to 3 months. When you’re ready to enjoy the frozen soup, you have a few options:

  • Thaw in the refrigerator: Transfer the frozen soup to the refrigerator and allow it to thaw slowly overnight.
  • Thaw in a pot: Place the frozen soup in a pot and heat it over low to medium heat, stirring occasionally until fully thawed.
  • Reheat: Once thawed, reheat the soup on the stovetop or in the microwave until it’s piping hot and reaches the desired temperature.

One Pot Pasta Fagioli

A white bowl with a yellow rim filled with Pasta Fagioli that is garnished with fresh parsley, grated Parmesan cheese and a drizzle of olive oil.

Looking for a cozy, flavorful, and hassle-free meal? Look no further! This One Pot Pasta Fagioli recipe is the answer! Packed with aromatic herbs, hearty beans, and the rich taste of bacon, this dish is a true Italian classic that warms the soul.

Plus, it’s a one-pot wonder, making cleanup a breeze. Wondering why you should try this recipe? Because it’s a comforting bowl of happiness, perfect for chilly nights or when you crave a taste of Italy in your own kitchen.

A white bowl with a yellow rim filled with Pasta Fagioli that is garnished with fresh parsley, grated Parmesan cheese and a drizzle of olive oil.

What is Pasta Fagioli?

Pasta Fagioli is a traditional Italian peasant dish. The ingredients to prepare this hearty soup are relatively inexpensive. Depending on the region, some Italians will prepare this as a thickened stew, while others enjoy as a brothy soup. Pancetta or bacon will often be used to flavor the fagioli. Alternatively, some preparations are vegetarian.

What kind of pasta to use in this One Pot Pasta Fagioli recipe?

This Pasta e Fagioli recipe calls for the pasta to cook in the soup broth. So, it’s best to use a small pasta shape. Ditalini is a great choice. However, feel free to use elbow macaroni, or a mezze pasta of your choice. Alternatively, break up partially used boxes of whatever pasta you have in your pantry.

Ingredients to Make One Pot Pasta Fagioli

Chances are, you have most, or all of the ingredients in your pantry and fridge to whip up this hearty Italian soup.

  • Cannellini beans: Great Northern or Navy Beans are great substitutes.
  • Crushed tomatoes: Easily substitute with tomato sauce or tomato passata.
  • Chicken stock: Use vegetable stock to make this a Vegetarian Pasta Fagioli.
  • Bacon: Pancetta is a great alternative. Leave out if making this a vegetarian pasta soup.

Dried vs. Canned Beans

Dried beans can be used instead of canned. Using dried beans to make this Italian pasta soup will require a bit more prep as the beans should soak overnight in salt water. Alternatively, cook dried beans prior to incorporating them into the Pasta Fagioli.

Additionally, dried beans will require additional broth or water, and will take a bit longer to cook in the soup. So, once you add them to the pot, keep checking the liquid levels as they simmer. Add more, as needed.

How to Prepare Pasta Fagioli

This One Pot Pasta Fagioli recipe is incredibly easy to make. It requires just one pot, but its exceptional depth of flavors develops over time as it simmers to perfection, making it well worth the wait.

  1. Sauté Aromatics: Heat olive oil in a soup pot over medium heat. Add bacon, onion, celery, carrot, and rosemary. Season with salt and pepper. Sauté for 5 minutes until vegetables soften and bacon is rendered.
  2. Add Flavors: Stir in minced garlic and cook for another minute. Add two cans of cannellini beans, crushed tomatoes, bay leaf, chicken stock and water. Bring almost to a boil, then reduce heat and simmer for 30-40 minutes. Remove bay leaf and woody stem of rosemary.
  3. Blend and Cook: Blend the remaining can of cannellini beans with a ladle of the soup in a food processor or use an immersion blender. Pour the mixture back into the pot. Add ditalini pasta and cook until al dente.
  4. Serve and Garnish: Stir in fresh parsley. Ladle the piping hot Pasta Fagioli into bowls. Garnish with freshly grated Parmesan cheese and a drizzle of olive oil.

Tips on Making the Best Pasta Fagioli

Preparing a delicious and healthy Pasta Fagioli is so easy! It does, however, require time to prep the vegetables, and simmer to marry all of these delicious flavor elements. Honestly, this One Pot Pasta Fagioli can be on your dinner table in about an hour!

  • Prep the ingredients first (if using dried beans, allot time for soaking overnight).
  • Dried herbs can be used instead of fresh (cut the amount in half if using dried).
  • Water can replace the broth.
  • Adding a Parmesan rind to the broth will enhance the flavor, but is not necessary.
  • Fresh spinach, escarole or other leafy greens are also great additions and should be added at the end.
  • Cook the pasta just to al dente.

How to Serve and Store

  • Serve this Italian Pasta Bean Soup with a side of crusty garlic bread and/or a simple green salad for a complete meal.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat gently on the stove, adding a splash of water or broth if needed to maintain the soup’s consistency.
  • This soup freezes wonderfully! Store cooled soup in freezer-safe containers for up to 2 months. Thaw in the fridge overnight and reheat on the stove over low heat, stirring occasionally.

a big bowl of creamy chicken enchilada soup garnished with avocado and jalapeño slices, sour cream and two pieces of cheese quesadilla. The soup has a rich, reddish/brown color.

USING ROTISSERIE CHICKEN TO MAKE SOUP

Utilizing rotisserie chicken in soup recipes like this low-carb Creamy Chicken Enchilada Soup offers a multitude of advantages, primarily revolving around convenience and time-saving benefits. Rotisserie chicken is pre-cooked, seasoned, and readily available at most grocery stores, making it a go-to ingredient for quick and easy meals. When used in soups or casseroles, rotisserie chicken shreds effortlessly, adding a hearty texture and a depth of flavor to the dish.

Substituting with Cooked Chicken

While rotisserie chicken is convenient, cooking your own chicken allows for greater control over the cooking process and flavor profile. When you cook chicken at home, you can customize the seasoning to compliment the specific recipe you’re preparing.

To substitute with cooked chicken, you can either roast, grill, boil, or even use a slow cooker. Roasting or grilling adds a lovely smokiness, similar to the rotisserie chicken, while boiling in a seasoned broth keeps the meat moist and flavorful. Once cooked, allow the chicken to cool slightly before shredding.

WHY YOU SHOULD MAKE THIS ENCHILADA SOUP RECIPE

  • Quick and Easy: Utilize rotisserie chicken for a hassle-free meal preparation. It’s a hearty soup that can be on your dinner table in 30-minutes!
  • Flavor-Packed: The combination of spices, tomatoes, and creamy base creates a burst of flavors in every spoonful.
  • Customizable: Adjust the spice level by controlling the amount of jalapeños and chili powder, making it suitable for everyone’s taste.
  • Nutrient-Rich: Packed with veggies, protein, and wholesome ingredients, it’s a balanced meal on its own.

TIPS ON MAKING THE BEST CHICKEN ENCHILADA SOUP

  • Balance the Heat: Adjust the spiciness to your preference. If you enjoy a milder soup, remove the seeds and membranes from jalapeños, or leave them out for a more kid-friendly option. For extra heat, add the seeds, and/or add a pinch of cayenne pepper.
  • Sauté Vegetables Well: Sautéing the carrots, onions, celery, and jalapeños before adding liquids enhances their natural sweetness. This step builds a robust foundation for your soup’s flavor.
  • Layer Flavors: Sautéing the spices briefly with vegetables intensifies their flavors.
  • Cream Cheese: Adding the cream cheese prior to blending will result in a creamier soup base.
  • Fresh Lime Juice: Squeeze fresh lime juice just before serving. The acidity brightens the flavors and balances the richness of the soup.

HOW TO MAKE CREAMY CHICKEN ENCHILADA SOUP

  • Prepare the Base: In a large pot, heat the oil and sauté the carrots, jalapeños, onions, and celery until tender. Season with salt and pepper. Add the spices and allow to toast up for a few minutes. Pour in the tomatoes. Stir. Cook for a few more minutes to develop even more flavor.
  • Simmer and Blend: Pour in chicken stock and let the mixture simmer for 15 minutes. Remove and discard the bay leaves
  • Creamy Addition: Return the soup to the pot over low heat. Add cream cheese. Blend with an immersion blender or stand-up blender until smooth and creamy.
  • Finishing: Taste for salt. Add the corn, black beans, shredded chicken and fresh cilantro. Simmer on low for another 5 minutes to heat through. Squeeze fresh lime juice into the soup and mix well.
  • Serve and Garnish: Ladle the soup into bowls. Garnish with fresh sliced jalapeños, avocado slices, lime wedges, shredded cheese, and/or a dollop of sour cream.

HOW TO SERVE AND STORE CREAMY CHICKEN ENCHILADA SOUP

Transform this easy, Homemade Chicken Enchilada Soup into a well-rounded, satisfying meal with these optional pairings:

  • Cheese quesadillas
  • Cornbread or warm tortillas
  • Side salad
  • Mexican rice

To store leftovers:

  1. Cool Down: Allow this comforting chicken soup to cool to room temperature before storing it.
  2. Airtight Container: Transfer the cooled soup into airtight containers or resealable plastic bags. Divide the soup into smaller portions if you plan to freeze it.
  3. Refrigeration: If you plan to consume the soup within a few days, store it in the refrigerator. It can stay fresh for 3-4 days.
  4. Freezing: If you want to store this creamy enchilada soup for a longer period, freezing is the best option. Cream-based soups can be frozen, but they might undergo a slight texture change upon thawing. To freeze, ensure the soup has cooled completely. Seal it in an airtight container or heavy-duty freezer bag, leaving some space for expansion. For better results, remove as much air as possible from the bag before sealing.
  5. Thawing and Reheating: Reheat the soup gently on the stovetop over low to medium heat, stirring occasionally to prevent sticking and ensure even heating. Avoid high heat to prevent the soup from curdling.

Notes

  • Use shredded rotisserie chicken for ease. Alternatively, cook your own chicken.
  • This Chicken Enchilada Soup is spicy. Leave out the jalapeño to make it more mild in flavor.
  • Be sure to remove and discard the bay leaves.
  • Add the cream cheese prior to blending to create a creamier soup base.
  • If using a stand-up blender, you may have to blend in batches. Be careful when blending as the mixture is HOT!
  • If the soup is too thick after blending, add in a touch more chicken stock.
  • To thicken the soup, add more cream cheese.
  • Optionally, garnish with fresh sliced jalapeño, sour cream, sliced avocado and/or shredded cheese.
  • For a complete meal, serve with Mexican rice, a side salad, cheese quesadillas or cornbread.
