INGREDIENTS TO MAKE SAUSAGE TORTELLINI SOUP

  • Hot Sausage – Link sausage tends to have more flavor than bulk. Just be sure to remove the casing. For a milder flavor, substitute with mild or sweet Italian sausage, ground beef, ground turkey, or a plant-based meat alternative to make this a vegetarian tortellini soup (of course, replace the chicken stock with vegetable stock).
  • Cheese Tortellini – Store bought refrigerated or frozen cheese tortellini will work in this one-pot soup recipe. However, feel free to use your favorite variety, or if time allows, make homemade tortellini. Mini ravioli or gnocchi are also great substitutes. If you have dietary restrictions, consider using gluten-free tortellini.
  • Cherry Tomatoes – Fresh is best, but canned, crushed or diced tomatoes are great substitutes.
  • Heavy Cream – Leave out for a healthier, lighter version of this cheese tortellini soup. If leaving out, add a touch more broth to compensate for the liquid.
  • Spinach – Chopped kale is a great substitute.

INSTRUCTIONS ON HOW TO MAKE TORTELLINI SOUP

  1. In a large pot, cook the hot Italian sausage over medium-high heat, breaking it into crumbles until it’s browned and almost cooked through. Remove any excess fat.
  2. Add the minced onion, garlic, carrots, and celery to the pot. Sauté for 3-4 minutes or until the vegetables are tender.
  3. Stir in the halved cherry tomatoes. Season with salt and pepper. Continue to cook for another 5 minutes until the tomatoes start to break down.
  4. Season with Italian seasoning.
  5. Pour in the chicken broth. Add in the bay leaves and Parmesan rind. Allow to simmer for about 5 minutes. Turn up the heat to a heavy simmer.
  6. Add the store-bought tortellini and cook for an additional 2 -3 minutes.
  7. Remove the bay leaves and Parmesan rind.
  8. Pour in the heavy whipping cream and stir in the fresh spinach leaves and let them wilt into the soup.
  9. Serve the Sausage Cheese Tortellini Soup hot, garnished with freshly grated Parmesan cheese.

HOW TO SERVE AND SAUSAGE CHEESE TORTELLINI SOUP

This Sausage Tortellini Soup pairs wonderfully with a side of crusty bread or a simple green salad. It’s a complete meal on its own, but you can also serve it as a starter for a more elaborate dinner spread.

If you have leftovers (though it’s so tasty, that might not be the case), allow the Sausage Cheese Tortellini Soup to cool to room temperature. Ingredients

  • 1 pound hot sausage
  • 16-ounces frozen or refrigerated cheese tortellini
  • 3 cups cherry tomatoes, halved
  • 3 garlic cloves, minced
  • 1/2 white onion, minced
  • 1 large celery stock, minced
  • 1 large carrot, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 bay leaves
  • 1 small Parmesan rind (optional)
  • 4 cups chicken or vegetable stock
  • 3/4 cup heavy whipping cream
  • 2 1/2 cups fresh baby spinach
  • freshly grated Parmesan cheese, for garnish

Instructions

  1. In a large pot, cook the hot Italian sausage over medium-high heat, breaking it into crumbles until it’s browned and almost cooked through. Remove any excess fat.

  3. Stir in the halved cherry tomatoes. Season with salt and pepper. Continue to cook for another 5 minutes until the tomatoes start to break down.
  4. Season with Italian seasoning.
  5. Pour in the chicken broth. Add in the bay leaves and Parmesan rind. Allow to simmer for about 5 minutes (a bit longer if you have the time). Turn up the heat to a heavy simmer.
  6. Add the store-bought tortellini and cook for an additional 2 -3 minutes.
  7. Remove the bay leaves and Parmesan rind.
  8. Pour in the heavy whipping cream and stir in the fresh spinach leaves and let them wilt into the soup.
  9. Serve the Sausage Cheese Tortellini Soup hot, garnished with freshly grated Parmesan cheese.

Our life has changed dramatically in the past few years with the passing of our two goldendoodles, Vegas and Viva. We were lucky enough to have Vegas for five years (totally wish it was longer). Most recently, losing our Viva to a brain tumor in July of 2020. We welcomed our mini goldendoodle 7, almost seven years ago. We just added the amazing Hazel!
