Chicken Corn Chowder

There’s nothing quite like a big bowl of Chicken Corn Chowder when fresh corn is in season. Sweet kernels cut straight from the cob add incredible flavor and texture, making this one of my favorite ways to enjoy summer produce. Pair that with rotisserie chicken, crispy bacon, tender potatoes, and a rich, creamy broth, and you’ve got a comforting meal that’s surprisingly easy to make.

One of my favorite things about this recipe is that it’s perfect for making the most of fresh corn, while it’s at its peak. If you have an abundance of corn from your garden or a trip to the farmers market, this chowder is the perfect excuse to use it. Even better, you can freeze fresh corn now, and enjoy this homemade chicken corn chowder all fall and winter long.

  • Potatoes: Yukon Gold potatoes create a creamy texture, but red potatoes or russets work too.

How to Prepare Chicken Corn Chowder

  1. Cook the bacon in a large Dutch oven or heavy-bottomed pot over medium heat until crisp. Remove the bacon with a slotted spoon and set aside, leaving about 2 tablespoons of the bacon drippings in the pot.
  2. Add the butter to the bacon drippings. Once melted, stir in the onion, celery, garlic, diced potatoes, and fresh thyme. Season with salt, black pepper, and paprika. Toss everything together and sauté for about 4 minutes, until the vegetables begin to soften.
  3. Sprinkle the flour evenly over the vegetables and stir well to coat. Cook for 2–3 minutes, stirring frequently, to remove the raw flour taste.
  4. Gradually pour in the chicken stock while stirring to create a smooth broth. Stir in half of the cooked bacon.
  5. Increase the heat until the soup is just about to boil, then reduce to a simmer. Cook for about 10 minutes, or until the potatoes are fork tender.
  6. While the soup simmers, place half of the fresh corn kernels in a blender with about ½ cup of the hot broth. Blend until mostly smooth.
  7. Once the potatoes are tender, stir the blended corn mixture into the chowder along with the remaining whole corn kernels, diced rotisserie chicken, and heavy cream.
  8. Taste for salt.
  9. Simmer for an additional 5 minutes, stirring occasionally, until the chicken is heated through and the chowder is creamy.
  10. Ladle into bowls and garnish with homemade croutons, the remaining crispy bacon, fresh thyme, and/or freshly cracked black pepper.

This Creamy Chicken Corn Chowder is made with fresh corn on the cob, rotisserie chicken, crispy bacon, potatoes, in a rich homemade broth. It’s an easy comfort food dinner that’s perfect for any season.


Ingredients

  • 6 slices thick-cut bacon, chopped
  • 2 tablespoons unsalted butter
  • 1 small yellow onion, diced
  • 1 celery stalk, finely diced
  • 2 cloves garlic, minced
  • 2 medium Yukon Gold or Idaho potatoes, peeled and diced
  • 1 teaspoon fresh thyme leaves, plus more for garnish
  • 1 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 2½ tablespoons all-purpose flour
  • 4 cups chicken stock
  • 5 ears fresh corn, kernels cut from the cob
  • 2 cups diced rotisserie chicken
  • 2 cups heavy cream

For Garnish (Optional):

  • Reserved crispy bacon

This Creamy Taco Soup recipe made in under 30 minutes with chicken, beans, rice, and bold taco flavors. An easy one pot dinner that’s perfect for Taco Tuesday, or any night of the week.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 jalapeño, diced
  • 1/2 yellow onion, minced
  • 2 garlic cloves, minced
  • 2 tablespoons taco seasoning (see below)
  • 1 box Zatarain’s Taco Rice
  • 1 can Rotel tomatoes
  • 8 ounces whipped cream cheese
  • 2 tablespoons Goya sofrito
  • 5 1/2 cups chicken stock
  • 2 cups rotisserie chicken, shredded
  • 1 can black beans, rinsed and drained
  • 2 tablespoons lime juice
  • 2 tablespoons fresh cilantro, plus more for garnish

Optional toppings: shredded cheese, sour cream, crispy tortilla strips, jalapeños, diced avocado, lime wedges

Homemade Taco Seasoning:

  • 2 tablespoons chili powder
  • 1 tablespoon paprika
  • 1 tablespoon cumin
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Heat the olive oil in a large soup pot over medium heat.

My husband grew up eating this meal made by his Italian mom, and there was always a big pot on the stove meant to feed everyone. It’s similar to pasta fagioli you may already know, but this version keeps things very simple with tomato paste, beans, and pasta simmered together into a thick, hearty bowl of comfort.

This is not a quick recipe, but it is very easy to make. The long simmer builds deep flavor while the beans and pasta make it filling and satisfying. It’s the kind of meal that tastes even better the next day and freezes beautifully, making it perfect for feeding a crowd or saving portions for later.

This Italian Pasta Beans is a traditional, rustic Italian recipe made with simple pantry ingredients, slow simmered for rich flavor and finished with ditalini pasta and Parmesan cheese.


Ingredients

Scale
  • 2 tablespoons oil
  • 2 (6-ounce) cans tomato paste
  • 2 cans water (use the empty tomato paste cans)
  • 16 cups water
  • 2 packets Goya ham base
  • 2 cans great northern beans, not rinsed or drained
  • 10 ounces ditalini pasta
  • Freshly grated Parmesan cheese, for serving

Instructions

  1. Heat the oil in a very deep pot over medium heat.
  2. Add the tomato paste and the two cans of water. Whisk well until the tomato paste is fully incorporated.
  3. Pour in the 16 cups of water. Add the great northern beans along with the liquid from the cans and the ham base packets. Stir to combine.
  4. Bring the mixture almost to a boil. Reduce the heat to low and allow it to gently simmer for about 2 hours, stirring occasionally as the broth slowly reduces and develops flavor.
  5. When the sauce has simmered down and thickened, cook the pasta in a separate pot, according to the package directions, until al dente.
  6. Transfer the cooked pasta directly into the pot with the beans and sauce. If the mixture becomes too thick, add a little of the reserved pasta water to loosen it.
  7. Serve hot and finish with freshly grated Parmesan cheese.

  • A very large pot is recommended since this recipe makes a big batch.
  • If replacing the ham base powder with paste, use a tablespoon.
  • The mixture thickens as it simmers and even more after the pasta is added.
  • Stir often, scraping the sides of the pot.
  • Reserve a bit of the pasta water just in case the mixture is too thick.
  • If the dish becomes too thick while reheating, simply add a splash of water or broth.
  • Freshly grated Parmesan adds the best flavor and finish to this dish.

  • 1 pound mild Italian sausage

  • 1 green bell pepper, minced
  • 1 jalapeño, diced
  • 1 (10-ounce) can Rotel diced tomatoes with green chiles
  • 1 (15-ounce) can crushed tomatoes
  • 3 (5.5-ounce) cans V-8 juice
  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 1 (15-ounce) can dark or light red kidney beans, rinsed and drained
  • 1 (15-ounce) can chili beans
  • Few dashes of hot sauce, optional
  • 2 tablespoons fresh chopped parsley
  • Shredded cheddar cheese and sour cream, for garnish

Seasoning Blend:

  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon paprika

  • 1 bay leaf
  • 1 cup heavy whipping cream
  • 1/2 cup freshly grated Parmesan cheese, plus more for garnish
  • 3 ounces baby spinach
  • Olive oil, for drizzling

This Pork and Cabbage Stew is the perfect comfort food. It’s slow cooked until the meat falls off the bone, and the cabbage becomes melt-in-your-mouth tender.


Ingredients

Units Scale
  • 2 1/23 pounds bone-in country style pork ribs
  • 2 tablespoons oil
  • 1 medium head green cabbage, cut into large chunks
  • 2 cups chunked tomatoes
  • 810 garlic cloves, halved
  • 1 teaspoon salt
  • 2 teaspoons cracked black peppercorns
  • 2 tablespoons paprika
  • 23 bay leaves
  • 4 1/2 cups chicken stock, divided
  • 34 cups water
  • 2 tablespoons fresh chopped parlsey

For Seasoning the Ribs:

  • 1 teaspoon salt, plus
  • 2 teaspoons black pepper
  • 2 teaspoons garlic powder

Instructions

  1. Let the pork ribs sit at room temperature for 30 minutes before searing.
  2. Mix the rib seasoning in a small bowl. Pat ribs dry, then season on all sides.
  3. Heat oil in a shallow pot or cast-iron pan. Sear ribs on all sides until browned (work in batches, if necessary).
  4. While searing, chop the cabbage into large chunks.
  5. Line the bottom of a slow cooker with 3–4 ribs. Add a layer of cabbage on top. Place remaining ribs over the cabbage.

  11. Add the fresh parsley and stir gently.

  • Can I make this in a slow cooker? Yes. Sear the chicken first, then add everything except the cheeses to the slow cooker. Cook on low 6–7 hours or high 3–4 hours. Stir in cream cheese and cheddar at the end.
  • What’s the best hot sauce to use? Frank’s RedHot is the classic Buffalo choice, but you can use your favorite brand. Try Cholula for smoky heat, or Crystal for extra tang.
  • Do I have to add cream cheese? No. Cream cheese makes it creamy, but you can skip it for a lighter version. Stir in a splash of heavy cream instead.
  • Can I use rotisserie chicken? Absolutely. Shred 2 cups of cooked rotisserie chicken and skip the searing step. Add the rotisserie chicken after the soup has simmered.
  • Is there a substitute for blue cheese? Yes. Ranch dressing or crumbled feta work well if you’re not a fan of blue cheese.
  • Can I make this less spicy? Reduce the hot sauce to 1/4 cup and balance with extra chicken stock. You can always add more hot sauce at the end.

Creamy Buffalo Chicken Soup

Description

This Creamy Buffalo Chicken Soup is spicy, cheesy, and cozy. An easy one-pot dinner that tastes like Buffalo wings in a bowl.


Ingredients

Units Scale
  • 2 boneless skinless chicken breasts
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 1 stalk celery, minced
  • 1/2 small yellow onion, minced
  • 3 cloves garlic, minced
  • 4 cups chicken stock
  • 1/2 cup hot sauce (Frank’s RedHot Buffalo recommended)
  • 4 oz cream cheese, whipped
  • 1/2 cup shredded cheddar cheese, plus more for garnish
  • Celery leaves, chopped, for garnish
  • Blue cheese crumbles, for garnish
  • Extra hot sauce, for drizzling (optional)

For Crispy Tortilla Strips:

  • 2 medium-sized flour or corn tortillas
  • oil for a shallow fry

Instructions

  1. Combine the seasonings in a small bowl. Season the chicken breasts on both sides.
  2. Heat the olive oil in a heavy pot over medium-high heat.
  3. Sear the chicken on both sides until golden (not fully cooked). Remove, cool slightly, then dice.
  4. Add the minced celery, onion, and garlic. Sauté for a minute.
  5. Return the diced chicken to the pot. Stir.
  6. Pour in chicken stock and hot sauce. Stir. Bring to a simmer, and cook 15–20 minutes, or until the chicken is cooked through and flavors meld.
  7. While the soup is simmering, cut the tortillas into strips. Fry until golden brown and crispy (this will only take a minute, or two). Drain on paper towels.
  8. Lower the heat. Stir in the cream cheese and shredded cheddar, until smooth and creamy. You can use a whisk to fully incorporate and melt the cream cheese.
  9. Taste and adjust for more hot sauce, as desired.
  10. Ladle into bowls and garnish with crispy tortilla strips,blue cheese crumbles, chopped celery leaves, and extra hot sauce, if desired.
  11. ENJOY!

Notes

  • Searing the chicken will incorporate extra flavor.
  • If using rotisserie chicken, add to the soup after it has simmered.
  • Adjust heat by adding more or less hot sauce.
  • Cream cheese makes the soup velvety.
  • Garnish with celery, green onions, and blue cheese for classic Buffalo flavor.
