If you’re craving a rich, comforting soup that’s quick to make, this Creamy Canned Clam Chowder recipe is just what you need.


Ingredients

Units Scale
  • 5 cans chopped clams, plus the juice
  • 1 bottle clam juice
  • 1 bottle water
  • 6 thick-cut bacon strips, diced
  • 1/4 white or yellow onion, minced
  • 1 stalk celery, minced
  • 3 garlic cloves, minced
  • 23 Yukon gold potatoes, peeled and tiny diced
  • 2 tablespoons fresh thyme
  • 1/3 cup flour
  • 3/4 cup heavy cream
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley, plus more for garnish
  • Cracked black pepper, for garnish

Instructions

  1. Open the canned clams, drain, and reserve the liquid. Set aside.
  2. In a heavy-bottom pot, cook the diced bacon over medium heat until crispy. Remove the bacon and set it aside. Reserve about 2 tablespoons of the bacon fat in the pot.
  3. Add the minced celery and onion to the bacon fat in the pot. Sauté for about 3 minutes until softened.
  4. Stir in the minced garlic, diced potatoes, and fresh thyme. Season with salt and pepper. Toss the vegetables in the bacon fat to coat evenly.
  5. Sprinkle the flour over the vegetables and cook for a few minutes to allow the raw flour taste to cook off.
  6. Pour in the reserved clam juice, bottled clam juice, and water. Bring almost to a boil, then reduce heat and simmer for 15 minutes, until the potatoes are tender.
  7. Stir in the heavy cream and allow it to simmer for another 5 minutes to thicken.
  8. Turn off the heat and stir in the clams and fresh parsley.
  9. Ladle into soup crocks and garnish with crisp bacon, fresh parsley, and cracked black pepper.
  10. ENJOY!

  • If you’d like a thicker chowder, simply add a bit more flour when cooking the vegetables or let the soup simmer a bit longer to reduce the liquid.

  • Passata: If passata is unavailable, blend canned whole tomatoes until smooth. Alternatively, use tomato sauce for a slightly different flavor profile.
  • Chicken Stock: Replace chicken stock with vegetable stock or broth for a vegetarian option.
  • Orecchiette Pasta: If orecchiette pasta isn’t available, substitute with small pasta shapes like shells or elbows. Gluten-free or whole wheat pasta can be used for dietary preferences.

How to Make Sausage Orecchiette Soup

With just a few easy steps and minimal time, you can indulge in a bowl of this Italian Sausage Orecchiette Soup:

  1. Heat a deep pot over medium heat. Remove the sausage from the casing and add it to the pot. Break it apart as it browns.
  2. Once the sausage is almost fully cooked, add the minced onions and garlic. Cook for an additional minute.
  3. Pour in the passata, season with salt and pepper, then add the chicken stock. Increase the heat to nearly a boil.
  4. Add the orecchiette pasta, stirring well. Reduce the heat to a simmer. Loosely cover the pot and allow the pasta to cook to just al dente, about 8 minutes. Stir frequently to prevent sticking.
  5. When the pasta is almost al dente, add the fresh spinach and Parmesan cheese. Stir well and cook for another minute to let the spinach wilt.

  • Bulk sausage can be used instead of link. Link sausage tends to have more flavor.
  • For more controlled spice, use mild Italian sausage and season to taste with crushed red pepper.
