This Creamy Chicken Enchilada Soup is a WINNER! Believe me, you will be making this delicious soup, over and over again! It’s so super easy and can be on your dinner table in about thirty minutes. Also, it’s another great use of a rotisserie chicken. No heavy whipping cream. All the magic comes from whipped cream cheese. Serve with low-carb cheese quesadillas for one amazing Soup and Sandwich combo. Top with your favorite garnishes. Make it as spicy as you wish. Mine had just the perfect amount of heat. In order to achieve that smooth and creamy texture, you will need to use either an immersion, or stand up blender. I highly recommend owning an immersion blender. Never thought I would use it as much as I do. Using an immersion blender is definitely less messy than having to pour the soup into a stand up blender. Additionally, it will be a huge time saver.

HOW TO MAKE CREAMY CHICKEN ENCHILADA SOUP
Make life super easy on yourself and purchase a rotisserie chicken, or two. Shred the white meat. Use the remaining meat and bones to create a fabulous chicken stock. Heat up the olive oil in a soup pot. One thing I love. most about this recipe is that you do not have to worry about chopping up the vegetables perfectly. Since they will all get blended, a rough chop will do just fine. Add in the carrots, celery, jalapeños and onions. Season with kosher salt and black pepper. Allow the vegetables to soften for about five minutes.
Pour in the tomatoes. Sprinkle on the spices and bay leaves. As mentioned above, change up the spice mixture as you wish. Combine the chicken stock. Bring to a boil. Turn down heat to a simmer. Squeeze in the juice of one-half of a lime. Simmer for 15 to 20 minutes.
Remove and discard the bay leaves. Add in the cream cheese. Using an immersion blender, blend until smooth and creamy. If you are using a stand up blender, you may have to process in batches. Be very careful, as the soup is super hot! Taste for salt. Not creamy enough for you, add more cream cheese.
Add in the shredded chicken, corn (can replace with fresh corn in the summer), black beans and fresh chopped cilantro. Allow to heat through.
TO FINISH AND SERVE THE CREAMY CHICKEN ENCHILADA SOUP
Pour this fabulous Creamy Chicken Enchilada Soup into big bowls. Garnish with sliced avocado, fresh jalapeños, lime wedges and fresh chopped cilantro. Top with a dollop of sour cream. Serve with cheesy quesadillas made from low-carb tortillas, or fry up a few tortilla strips. ENJOY!
