  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 small yellow onion, diced
  • 1 green bell pepper, diced
  • 1 orange or red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 1/2 tablespoons tomato paste
  • 1 1/4 cups long-grain white rice (uncooked)
  • 1 (14.5 oz) can fire-roasted diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 3/4 cups chicken stock

How to Prepare Creole Chicken Pot Pie

  1. Preheat the oven to 415°F (213°C).
  2. Sauté the bell peppers, onion, celery, and garlic. Season with salt, black pepper, Creole seasoning, and paprika. Sauté for about five minutes, to soften.
  3. Add in the diced potatoes. Season with the remaining salt and pepper. Stir to coat the potatoes in the butter.
  4. Sprinkle on the flour and stir to coat. Cook for a few minutes to remove the raw flour taste.
  5. Pour in the chicken stock. Bring the heat up to just under a boil, then reduce and simmer until the potatoes are softened, about 10 minutes.
  6. While the mixture simmers, add the biscuit mix to a large bowl, along with the cold water and shredded cheese. Mix just to combine without over-mixing. Set aside.
  7. Once the potatoes are softened, pour in the heavy cream and allow to heat through and slightly thicken.
  8. Stir in the diced chicken and corn. Cook for another few minutes until heated through.
  9. Fill oven-safe ramekins with the Creole chicken mixture. Top each with the biscuit mixture and brush with a touch of melted butter.
  10. Bake for 15-20 minutes, or until the biscuit topping is golden brown and cooked through.
  11. With a few minutes left of baking time, melt the remaining butter. Stir in the seasoning packet and fresh parsley.
  12. Once the pot pies are out of the oven, brush the tops with the buttery mixture and serve hot.

Creole Chicken Pot Pie is packed with flavor and a rich, creamy filling. This twist on classic chicken pot pie is sure to become a family favorite.


Ingredients

Scale
  • 1 1/4 cup diced rotisserie chicken breast
  • 3 tablespoons butter
  • 1 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1/4 yellow onion, minced
  • 1 stalk celery, minced
  • 3 garlic cloves, minced
  • 1 russet potato, peeled and tiny diced
  • 1 tablespoon Creole seasoning
  • 1 teaspoon paprika
  • 1 teaspoon salt, divided
  • 1 teaspoon black pepper, divided
  • 3 tablespoons flour
  • 2 cups chicken stock
  • 1 cup heavy whipping cream
  • 1 cup frozen or fresh sweet corn

For the cheddar bay topping:

  • 1 package Red Lobster Cheddar Bay biscuit mix
  • 3/4 cup cold water
  • 3/4 cup sharp cheddar cheese, shredded
  • 1/4 cup butter, melted
  • 1 package seasoning mix (included with the biscuit mix)
  • 1 tablespoon fresh chopped parsley

Instructions

  1. Preheat the oven to 415°F (213°C).

  • Line the pan with parchment paper for easy clean up.

These Tender Meatloaf Meatballs with Onion-Ketchup Gravy recipe is a delightful twist on the timeless classic of meatloaf. Ingredients

Scale
  • 1 pound ground meatloaf mix (beef, veal and pork)
  • 1 pound 80/20 ground beef
  • 3 slices bread
  • 1/2 cup heavy whipping cream
  • 1/4 onion, minced
  • 1 carrot, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/3 cup ketchup
  • 1 tablespoon yellow mustard
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon olive oil

FOR THE ONION-KETCHUP GRAVY:

  • 1 small white or yellow onion, sliced thin
  • 2 tablespoons flour
  • 3/4 cup chicken stock or water
  • 2 cups ketchup
  • 1/2 cup water

Instructions

  1. Tear the bread into pieces and add to a large mixing bowl.
  2. Pour in the heavy cream. Mix. Soak the bread for about 5 minutes.
  3. Add in the minced onion, carrots, meatloaf mix, ground beef, salt, pepper, ketchup, mustard and Worcestershire sauce. 
  4. Gently mix with your hands to combine. Try not to over mix.
  5. Form the meat mixture into meatballs.
  6. Heat up the olive oil in a pot.
  7. Fry the meatballs until they are cooked through and seared perfectly. Do this in batches. Transfer the meatballs to a plate as they finish.
  8. Once all meatballs have been cooked, drain all but 2 tablespoons of the grease. Try to leave those browned bits.
  9. Add in the onions. Sauté for a few minutes to soften.
  10. Sprinkle with the flour. Allow the raw flour taste to cook off for a few minutes.
  11. Deglaze with chicken stock or water. Scraping up the bits on the bottom.
  12. Turn up the heat.
  13. Add in the ketchup and water. Mix. If they gravy seems too thick, add a touch more water.
  14. Bring to just under a boil then turn down the heat to a simmer.
  15. Simmer for 10 minutes.
  16. Add the meatballs back to the pot along with any juices.
  17. Allow them to heat through a few minutes.
  18. Serve on top of creamy mashed potatoes.

  • 1/2 cup breadcrumbs and 1 egg can be substituted for the bread soaked cream (although I highly recommend the cream-soaked bread)
  • replace the cream with milk
  • mincing the onions and carrots allows you to directly add them to the meat mixture without sautéing to soften first
  • do not overmix the meat mixture so as to avoid dense meatballs
  • make sure the oil is hot prior to adding the meatballs
  • fry at least half of the meatballs to make the gravy
  • sear the meatballs in batches (I fried half of them and baked the other half in a 375° oven for 10 minutes)

Ground Lamb Cabbage Rolls

WHAT DOES GROUND LAMB TASTE LIKE?

If you’ve never tried ground lamb before, it’s worth giving it a try to see if you enjoy its rich, savory taste. Eating lamb is part of my Serbian heritage. In fact, I’m quite sure lamb was given to me in my baby bottle.

Ground lamb has a distinct flavor that sets it apart from other types of ground meat. The taste of ground lamb can be described as rich, slightly gamey, and savory. It has a strong, earthy flavor that is similar to that of lamb chops or other lamb cuts. Some people may find the taste of lamb to be a bit too strong, while others enjoy it as a flavorful alternative to beef or pork.

TIPS ON MAKING THE BEST GROUND LAMB CABBAGE ROLLS

Although not traditional, I loved changing up a classic Cabbage Roll recipe by substituting ground beef with ground lamb. In addition, the use of lamb called for a variety of spices that would not normally be used when making the traditional recipe.

Here are a few tips to use when making these Lamb Stuffed Cabbage Rolls:

  • Salt the water for wilting the cabbage
  • Do NOT boil the leaves…a simmer is all you need to wilt the cabbage leaves (this will only take a few minutes)
  • Boiling the delicate leaves will make them fall apart
  • Drain the leaves on paper towels to soak up any excess water
  • Add the seasonings to the ground lamb, first
  • Do NOT over mix the meat mixture
  • Add the leftover raw, inner cabbage leaves to the bottom of the oven-safe pot to ensure the potatoes do not burn
  • Season every layer with a touch of salt and pepper (including the chopped tomatoes)
  • You can use whole tomatoes…just crush with your hands prior to adding them to the pot
  • Roll the stuffed cabbage rolls as tight as you can
  • Add enough stock to the pot to at least cover the cabbage rolls by half

  • 1 1/2 pounds ground lamb
  • 1 large head Napa cabbage
  • 1 28-ounce can whole or chopped tomatoes
  • 2 russet potatoes, peeled and thick-sliced
  • 2 1/2 teaspoons salt, divided
  • 1 teaspoon black pepper
  • 2 teaspoons cumin
  • 2 teaspoons ground coriander
  • 1 1/2 teaspoons dried oregano
  • 1/2 teaspoon crushed red pepper
  • 2 teaspoons lemon zest
  • 3 garlic cloves, minced
  • 1/4 white onion, minced
  • 3/4 cup cooked rice
  • 2 tablespoons fresh chopped parsley, plus more for garnish
  • 1 egg
  • 3 1/2 to 4 cups chicken stock

Instructions

  1. Preheat oven to 350°.
  2. Bring a pot or deep pan of water almost to a boil.
  3. Trim the bottom core of the Napa cabbage to release the leaves (you should get about 8 large leaves).
  4. Salt the water. Add the cabbage leaves and cook for about 2 minutes to wilt.
  5. Transfer onto paper towels to dry.
  6. Add the ground lamb to a large bowl. Sprinkle the meat with 1 teaspoon salt, the black pepper, cumin, coriander, and oregano. 
  7. Add the lemon zest, minced garlic and onions, cooked rice, fresh parsley and egg.
  8. Mix just until fully incorporated (Do NOT over mix). 
  9. Lay down one wilted cabbage leave onto a flat surface.
  10. Trim away any hard core.
  11. Grab some of the meat mixture and place on the core end. 
  12. Roll once, grab the sides and fold them on the top. Continue rolling to form.
  13. Finish the remaining. 
  14. Form meatballs with any of the remaining meat mixture.
  15. Line the bottom of an oven-safe, heavy bottom pot with the leftover raw cabbage leaves.
  16. Add the sliced potatoes in a single layer. Season with a touch of salt and pepper.
  17. Spoon on about 3/4 of the chopped tomatoes. Season with a sprinkling of salt.
  18. Place the cabbage rolls. Top with the remaining tomatoes. 
  19. Pour in the stock (Enough to cover the cabbage rolls by half).
  20. Cover and bake for 2 hours. 
  21. Serve the cabbage rolls with the melty potatoes. Garnish with fresh chopped parsley and cracked black pepper.

This slow-cooked beef recipe will yield approximately 8 servings. If making for a smaller crowd, use only half of the required short ribs. However, keep the remaining ingredients amounts the same.

  • Flour: Flour is used for thickening the sauce. You can substitute with cornstarch or arrowroot powder for a gluten-free option, though the thickening process will differ.
  • Tomato Paste: Tomato paste enhances the depth of flavor. You can substitute with tomato sauce or crushed tomatoes if tomato paste is unavailable.

Easily, transform a humble cut of beef into one elegant, comforting dish. While this short rib recipes exudes sophistication, the preparation is surprisingly manageable:

  1. Pat the short ribs dry and season on all sides with salt and pepper.
  2. Heat the oil to medium-high, in a deep, oven-safe pot. 
  3. Sear the meat, in batches, to form a golden crust on all sides.
  4. Reserve on a plate.
  5. Remove all but three tablespoons of the fat. Lower the heat to medium.
  6. Add in the vegetables. Season with salt and pepper. Sauté for a few minutes.
  7. Dust the vegetables with the flour. Cook off the raw flour taste for a few minutes.
  8. Add in the tomato paste. Cook for another minute.
  9. Pour in the red wine.
  10. Add back the meat. Reduce for about 20-30 minutes.
  11. Pour in the beef stock. Add the fresh herbs. 
  12. Bring back to a heavy simmer. Cover.
  13. Bake at 325°F (163°C) for three hours. 
  14. Once tender, remove the ribs onto an oven-safe platter. Keep warm in the oven (oven should be turned off). 
  15. Strain the braising liquid into the same pot. 
  16. Turn up the heat and allow to simmer and reduce. 
  17. For added flavor, spoon in a packet of store-bought demi-glacé. 
  18. Plate the ribs on a bed of warm, puréed mashed potatoes. Ladle on the rich demi-glacé.

  • 2 stalks celery, roughly chopped
  • 1 small white or yellow onion, roughly chopped
  • 6 whole garlic cloves
  • 3 tablespoons flour
  • 3 tablespoons tomato paste
  • 3/4 bottle Cabernet Sauvignon
  • 4 cups beef stock
  • 2 sprigs rosemary
  • 4 sprigs fresh thyme
  • 4 sprigs fresh parsley
  • 2 bay leaves
  • 1 packet demi-glacé or 1 tablespoon Better Than Bouillon Beef Base

Instructions

  1. If possible, allow the short ribs to come to room temperature. Pat dry. Season on all sides with salt and pepper.
  2. Heat the oil to medium-high, in a deep, oven-safe pot. 
  3. Sear the meat to form a golden crust on all sides. Do this in batches.
  4. Remove the ribs and reserve on a plate, or platter.
  5. In the same pot, remove all but 3 tablespoons of the fat. Lower the heat to medium.
  6. Add in the celery, onions and garlic. Season with salt and pepper. Sauté for a few minutes to soften.
  7. Dust the vegetables with the flour. Cook off the raw flour taste for a few minutes.
  8. Add in the tomato paste. Cook for another minute.
  9. Pour in the red wine. Scrape up any bits from the bottom. 
  10. Add back the meat. Allow the wine to reduce for about 30 minutes.
  11. After the wine has reduced by almost half, pour in the beef stock. Add in the fresh herbs. 
  12. Allow to come back to a heavy simmer. Cover.
  13. Place in a preheated 325°F (163°C) oven for 3 hours. 
  14. After 3 hours, gently remove the ribs onto a sheet pan or oven-safe platter. Keep warm in the oven (oven should be turned off). 
  15. Strain the braising liquid into the same pot. 
  16. Turn up the heat and allow to simmer and reduce. 
  17. Optionally, for added flavor, spoon in a packet of store-bought demi-glacé. 
  18. Plate the ribs on a bed of warm, puréed mashed potatoes. Ladle on the rich demi-glacé.
  19. Garnish with fresh herbs.
  20. ENJOY!

Notes

  • To achieve a perfect sear, allow the short ribs to come to room temperature and pat dry. After seasoning well, sear in a high smoke point on medium-high, in batches, until a golden crust forms on all sides. 
  • Do not rush the process. Keep the oven temperature at 325°F (163°C) for the entire 3 hours.
  • Feel free to add roughly chopped carrots to the mirepoix.
  • Choose a Cabernet you enjoy drinking. A Pinot Noir is a great alternative.
  • Allow the wine to reduce prior to adding in the broth. This will intensify the flavors and provide for a more concentrated base for braising.
  • Optionally, for added flavor, add in a packet of French demi-glacé when reducing the strained braising liquid.
  • Leftovers can be stored in the fridge for up to 4 days and easily repurposed as another meal.
