  7. Reduce heat to low, cover, and simmer for 15–20 minutes, stirring occasionally to ensure the rice does not stick to the bottom of the skillet. Cook until the liquid has absorbed and the rice is tender. Add a splash more broth, if needed.
  8. Stir in fresh parsley just before serving. Taste and adjust salt, if needed.

Ingredients

  • 1 lb ground beef (80/20 is best)
  • 1/2 teaspoon salt (plus a pinch more later)
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 small yellow onion, diced
  • 1 green bell pepper, diced
  • 1 orange or red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 1/2 tablespoons tomato paste
  • 1 1/4 cups long-grain white rice (uncooked)
  • 1 (14.5 oz) can fire-roasted diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 3/4 cups chicken stock
  • Fresh parsley, chopped (for finishing)

Instructions
