Baked Corvina with Tomatoes is a light, flavorful oven baked white fish dinner that feels fresh, simple, and effortlessly impressive. This easy baked corvina recipe combines sweet cherry tomatoes, garlic, bright citrus, capers, and white wine to create a vibrant, Mediterranean-inspired sauce that keeps the fish tender and flaky. While I love using corvina for its mild, buttery texture, this baked white fish recipe works beautifully with cod, snapper, halibut, sea bass, or any firm, flaky white fish you have on hand.

- White wine – Substitute with seafood stock, chicken broth, or vegetable broth for a similar depth of flavor.
- Capers – Chopped green olives or kalamata olives offer a similar briny flavor profile.
- Orange juice – Can substitute with all lemon juice for a brighter, sharper citrus finish.
- Fresh garlic – Garlic powder may be used in a pinch, though fresh garlic gives the best flavor.
- Fresh parsley or basil (garnish) – Optional, but recommended for freshness and color. Dried herbs can be used lightly, if needed.
How to Prepare Baked Corvina with Tomatoes
- Preheat your oven to 375°F (190°C).
- Lightly brush a casserole dish or oven-safe pan with olive oil.
- Pat the fish dry. Brush lightly with olive oil on both sides.
- Season both sides of the corvina fillets with salt, pepper, onion powder, garlic powder, and paprika.
- Place the seasoned fish in the prepared dish.
- Scatter halved cherry tomatoes, capers, and smashed garlic evenly over and around the fish.
- Squeeze orange and lemon juice over the top, and pour the white wine around (not directly on) the fish.
- Add the rosemary and crushed red pepper flakes.
- Cover the casserole dish with foil and bake for 18–25 minutes, until fish is opaque and flakes easily with a fork.
- Remove from the oven and garnish with fresh parsley before serving with lemon wedges.

How to Serve and Store
- Serve over fluffy white rice or roasted russet potatoes to soak up the tomato white wine sauce.
- Pair with crusty bread to dip into the citrus garlic sauce, a simple green salad, or sautéed spinach.
- Refrigerate leftovers in an airtight container for up to 3 days.
- Reheat gently in a 275°F (135°C) oven, covered with foil, until warmed through.
- Avoid microwaving as it can overcook and dry out delicate white fish.
Frequently Asked Questions
- Is corvina a mild fish? Yes! Corvina has a mild, slightly sweet flavor with firm, flaky white flesh, similar to sea bass, making it great for simple baked fish recipes.
- Can I bake corvina without foil? You can, but covering with foil traps steam and keeps the fish perfectly moist. Removing the foil the last 5 minutes will slightly brown the tomatoes if you like.
- How do I tell when corvina is done? The fish is done when it is opaque and easily flakes with a fork. The internal temperature should reach 145°F (63°C) if you use an instant-read thermometer.
- Can I make this ahead? You can prep the ingredients up to 12 hours ahead, just cover and refrigerate before baking. Only bake when ready to serve for best texture.

Description
Baked Corvina with Tomatoes is an easy oven baked white fish recipe that’s light, flavorful, and ready in just about 30 minutes.
Ingredients
- 1–1 1/2 lbs skinless corvina fillets (or similar flaky white fish)
- 2 teaspoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon paprika
- 1 pint cherry tomatoes, halved
- 4 garlic cloves, crushed
- 2 tbsp capers, rinsed
- Juice of 1 orange
- Juice of ½ lemon
- 1/4 cup dry white wine
- 2 sprigs fresh rosemary or thyme
- 1 tablespoon fresh chopped parsley, for garnish
- Lemon wedges, for serving
Instructions
- Preheat your oven to 375°F (190°C).
- Lightly brush a casserole dish or oven-safe pan with olive oil.
- Pat the fish dry. Brush lightly with olive oil on both sides.
- Season both sides of the corvina fillets with salt, pepper, garlic powder, onion powder and paprika.
- Remove from the oven. Discard the rosemary and garnish with fresh herbs before serving with lemon wedges.
- ENJOY!
Notes
- Use fillets that are similar in thickness so the fish cooks evenly. Thicker pieces may need an extra 3–5 minutes in the oven.
- Bake just until the fish flakes easily with a fork. The internal temperature should reach 145°F (63°C). Overbaking will dry out white fish quickly.
- If using frozen fish, thaw completely and pat very dry before seasoning to prevent excess liquid in the casserole dish.
- Covering the dish while baking helps keep the fish tender and allows the tomatoes to break down into a light sauce. You can uncover for the last 3–5 minutes if you prefer a slightly more concentrated finish.
- This recipe works with corvina, cod, snapper, halibut, sea bass, grouper, or any firm white fish. Adjust baking time based on thickness.
- Be sure to spoon the sauce over the fish when serving.
