If you are like me, you may never heard of wolffish. Wolffish is a mild, white, firm-fleshed fish commonly found in the North Atlantic. Its flavor is delicate and not overly “fishy,” making it a great alternative to cod or haddock. Because wolffish has a flaky but slightly dense texture, it holds up well to baking, frying, or grilling. It’s also sustainable and a good source of lean protein, vitamins, and minerals.

  7. Bake, uncovered, for 20–25 minutes, or until the fish flakes easily with a fork. If preparing smaller portions, check at 15 minutes.
  8. For extra color, broil for 1–2 minutes at the end.
  9. Garnish with parsley and serve with lemon wedges.

This Almond Crusted Baked Wolffish is a crispy baked fish dinner that’s light, flavorful, and packed with texture. Tender white fish is topped with a buttery almond and panko breadcrumb crust, baked until golden brown, and finished with fresh parsley and lemon.   • 1/4 cup sliced almonds
  • 1 tablespoon fresh chopped parsley, plus more for garnish
