Description

This Almond Crusted Baked Wolffish is a crispy baked fish dinner that’s light, flavorful, and packed with texture. Tender white fish is topped with a buttery almond and panko breadcrumb crust, baked until golden brown, and finished with fresh parsley and lemon. The recipe is simple to prepare, and can easily be made with cod, haddock, or any other mild white fish you prefer.


Ingredients

  • 1 1/41 1/2 pounds wolffish, skin-off
  • 3 tablespoons butter, melted
  • 3/4 cup panko breadcrumbs
  • 1/4 cup sliced almonds
  • 1 tablespoon fresh chopped parsley, plus more for garnish
  • Lemon wedges, for serving

For the Seasoning Blend:

  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 1/2 teaspoons paprika

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a small bowl, combine the salt, pepper, garlic powder, onion powder, and paprika.
  3. Grind the almonds in a blender or food processor, until finely ground.
  4. Pat the fish dry with paper towels and season both sides with the seasoning blend. Place onto a baking sheet.
  5. Melt the butter and combine with the panko, ground almonds, and parsley. Mix well until evenly coated.
  6. Press the breadcrumb mixture firmly on top of the seasoned fish.
  7. Bake, uncovered, for 20–25 minutes, or until the fish flakes easily with a fork. If preparing smaller portions, check at 15 minutes.
  8. For extra color, broil for 1–2 minutes at the end.
  9. Garnish with fresh parsley and serve with lemon wedges.

Notes

  • Wolffish cooks quickly, so check for doneness at the lower end of the cooking time.
  • Easily substitute the wolffish with your favorite white fish, or even salmon.
  • If you do not have a food processor, simply add the almonds to a freezer bag and pound with a rolling pin.
  • Feel free to use your favorite seasoning blend.
  • The almond crust should be pressed firmly so it adheres well during baking.
  • If preparing individual filets, bake time will decrease.
  • Always taste before serving and finish with a squeeze of lemon for brightness.
