- 1 (3 1/2 -4 1/2 lb.) whole chicken
- 1 1/8 teaspoon salt
- 1 1/8 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 to 2 tablespoons olive oil
- 1/2 garlic bulb, top cut off
- 1 lemon, halved
- 3 sprigs fresh thyme and/or rosemary
Instructions
- Remove any innards from the chicken and pat both the inside and outside dry with paper towels.
- Season the inside of the cavity with 1/8 teaspoon of salt and 1/8 teaspoon pepper.
- Stuff the cavity with the garlic, lemon halves, and fresh herbs.
