This Spicy Chicken BLT Sandwich is a kicked-up twist on the classic. With melty hot pepper cheese, crispy bacon, creamy avocado, and a smoky chipotle mayo, every bite delivers bold flavor and satisfying crunch.


Ingredients

Scale
  • 4 thin slices Italian or sourdough bread (toasted, if desired)
  • 6 slices thick-cut bacon
  • 4 slices rotisserie chicken
  • 4 slices hot pepper cheese (like pepper jack or habanero jack)
  • 2 Romaine lettuce leaves
  • 4 slices tomato
  • 1 avocado, thinly sliced
  • Pinch of salt and pepper

For the Chipotle Mayo:

  • 1/2 cup mayonnaise (use full-fat for best flavor)
  • 12 chipotle peppers in adobo, finely minced or blended
  • 1 tablespoon adobo sauce (from the same can)
  • 1 teaspoon freshly squeezed lime juice
  • 1/4 teaspoon garlic powder
  • Pinch of salt, to taste

Instructions

  1. Place the bacon on a parchment-lined baking sheet. Place the sheet in a cold oven and set the temperature to 400°F (200°C). Bake until the bacon is golden and crisp, about 15 minutes. Drain on paper towels.
  2. ]While the bacon is baking, make the chipotle mayo by combining the mayonnaise, chipotle peppers, adobo sauce, lime juice, garlic powder, and salt in a small bowl or jar. Blend with an immersion blender, or use a food processor.
  3. Toast the bread slices, if desired.
  4. Overlap two pieces of the rotisserie chicken slices onto a baking sheet lined with parchment. Top each stack with 2 slices of hot pepper cheese.
  5. Once the bacon is finished, switch the oven to broil and place the cheesy chicken under the broiler. Broil just until the cheese is melted, and slightly browned.
  6. To build the sandwiches, spread a spoonful of chipotle mayo on the bottom bread slices. Top with cheesy chicken, bacon, romaine lettuce, tomato slices (seasoned with salt and pepper), and avocado.
  7. Spread more chipotle mayo on the inside of the top bread slices. Close the sandwiches, cut in half, and serve immediately.
  8. ENJOY!
