Description
This Arugula BLT Sandwich is an upgraded version of a classic BLT that is elevated with a bright, zesty garlic lemon mayo.
Ingredients
- 4 slices multi-grain bread
- 10 slices bacon
- 1 cup baby arugula
- 4 slices tomato
- 1 avocado, sliced (optional)
- pinch of salt and black pepper
For the Garlic Lemon Mayo:
- 1/2 cup mayo
- 1 clove garlic, grated
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- 1 teaspoon whole-grain mustard
Instructions
- Place the bacon slices on a baking sheet (lining with parchment paper is optional). Place into a cold oven, then set the temperature to 400°F (200°C).
- While the bacon cooks, make the garlic lemon mayo by combining mayo, grated garlic, black pepper, lemon juice, and whole-grain mustard in a small bowl. Mix until smooth.
- Toast the bread slices, if desired.
- Once bacon is crisp (about 15–20 minutes), transfer to a paper towel-lined plate to drain excess grease.
- Assemble the sandwiches by spreading the garlic lemon mayo on the inside bottom slice of the toasted bread.
- Divide arugula over the mayo.
- Add crisp bacon slices.
- Top with tomato slices and season lightly with salt and black pepper.
- If using, add sliced avocado.
- Spread garlic lemon mayo on the inside of the top slice of the toasted bread and close the sandwich.
- Cut, serve, and ENJOY!
