Description
This Spicy Chicken BLT Sandwich is a kicked-up twist on the classic. With melty hot pepper cheese, crispy bacon, creamy avocado, and a smoky chipotle mayo, every bite delivers bold flavor and satisfying crunch.

- 4 thin slices Italian or sourdough bread (toasted, if desired)
- 6 slices thick-cut bacon
- 4 slices rotisserie chicken
- 4 slices hot pepper cheese (like pepper jack or habanero jack)
- 2 Romaine lettuce leaves
- 4 slices tomato
- 1 avocado, thinly sliced
- Pinch of salt and pepper
For the Chipotle Mayo:
- 1/2 cup mayonnaise (use full-fat for best flavor)
- 1–2 chipotle peppers in adobo, finely minced or blended
- 1 tablespoon adobo sauce (from the same can)
- 1 teaspoon freshly squeezed lime juice
- 1/4 teaspoon garlic powder
- Pinch of salt, to taste
Instructions
- Place the bacon on a parchment-lined baking sheet. Place the sheet in a cold oven and set the temperature to 400°F (200°C). Bake until the bacon is golden and crisp, about 15 minutes. Drain on paper towels.
- ]While the bacon is baking, make the chipotle mayo by combining the mayonnaise, chipotle peppers, adobo sauce, lime juice, garlic powder, and salt in a small bowl or jar. Blend with an immersion blender, or use a food processor.
- Toast the bread slices, if desired.
- Overlap two pieces of the rotisserie chicken slices onto a baking sheet lined with parchment. Top each stack with 2 slices of hot pepper cheese.
- Once the bacon is finished, switch the oven to broil and place the cheesy chicken under the broiler. Broil just until the cheese is melted, and slightly browned.
- To build the sandwiches, spread a spoonful of chipotle mayo on the bottom bread slices. Top with cheesy chicken, bacon, romaine lettuce, tomato slices (seasoned with salt and pepper), and avocado.
- Spread more chipotle mayo on the inside of the top bread slices. Close the sandwiches, cut in half, and serve immediately.

- Use full-fat mayo for best flavor
- Start with one chipotle pepper and taste before adding more
- This recipe will make more chipotle mayo than needed for two sandwiches. Use the leftover sauce for dipping roasted vegetables, drizzle over tacos, use on burgers, and so much more.
