CREAMED SPINACH

Ingredients

  • 2 large bags or containers of baby spinach
  • 1 stick salted butter
  • 3 garlic cloves, minced
  • 1 shallot, minced
  • 1 Tablespoons flour
  • 2 Cups heavy whipping cream
  • 1 Cup Parmesan cheese
  • 2 teaspoons ground nutmeg
  • Kosher salt/Pepper

When I first met my Husband, he would take me on dates to Morton’s Steakhouse quite often. Creamed Spinach was always one of his favorite sides dishes. So, I was trying to think of a new accompaniment to Faroe Island Salmon. Honestly, I prepare this salmon on a weekly basis. Spinach came to mind, as it always does. However, I wanted to change it up a bit. Sautéed was getting old and boring.

Creamed Spinach it was. Let me tell you, the entire meal was amazing. I will definitely be making this over and over again! It is super rich, and very decadent. But, so worth every calorie and gram of fat. For those of you following the Keto diet, this one is for you. The recipe is surprisingly super easy, and quick to prepare.

HOW TO PREPARE CREAMED SPINACH

In a bowl, start microwaving the spinach in batches. Three to four minutes per batch will suffice. Remove from microwave and squeeze out as much water as you can out of the spinach. Set aside.

Melt butter in a pan. Toss the garlic, shallots, nutmeg and a pinch of salt into the pan with the melted butter. Allow the shallots to become translucent. This should take about two minutes. Do not brown! Add the flour to the melted butter mixture and whisk to remove any lumps. Pour in the heavy cream and allow to cook, just under a boil, until the sauce thickens. Four to five minutes is perfect. Remove from heat. Very slowly, add in the Parmesan cheese. This will enjoy the cheese will not clump. Stir in the spinach. Combine well to fully coat. Taste for additional salt.

Serve this amazing Creamed Spinach with salmon, chicken, or pork. To create a real steakhouse dinner, pair with a juicy, thick steak. Many of you have asked how I prepared the Salmon. Super easy. Sprinkle the salmon filets with a little bit of light olive oil, kosher salt and black pepper. Heat up a cast iron pan to medium-high. Once hot, place the salmon skin side up. Sear then flip.

The salmon will be super flaky with an incredible crispy skin. Faroe Island salmon in sushi-grade. So, feel free to serve at medium.
