Ingredients

  • 20 ounces fresh baby spinach
  • 2 1/2 tablespoons butter
  • 1 small shallot, minced
  • 3 garlic cloves, minced
  • 1 teaspoon black pepper
  • 1 teaspoon ground nutmeg
  • 1 1/2 tablespoons flour
  • 2 cups heavy whipping cream
  • 3/4 cup freshly grated Parmesan cheese, plus more for garnish
  • Cracked black pepper, for garnish

Instructions

Notes

  • Easily replace fresh spinach with frozen. Thaw according to package directions and be sure to squeeze out any excess water.
  • Slowly incorporate the Parmesan cheese to reduce the risk of clumping.
  • Taste for salt after incorporating the cheese. 
  • Once the spinach is incorporated, just warm through for a minute or two. Do not over cook.
