Description

This Steakhouse Creamed Spinach side dish is the perfect combination of tender spinach, creamy Parmesan sauce, and aromatic spices. It’s easy to make, and delivers restaurant-quality taste in the comfort of your home.


Ingredients

  • 20 ounces fresh baby spinach
  • 2 1/2 tablespoons butter
  • 1 small shallot, minced
  • 3 garlic cloves, minced
  • 1 teaspoon black pepper
  • 1 teaspoon ground nutmeg
  • 1 1/2 tablespoons flour
  • 2 cups heavy whipping cream
  • 3/4 cup freshly grated Parmesan cheese, plus more for garnish
  • Cracked black pepper, for garnish

Instructions

  1. In a microwave-safe bowl, microwave the spinach in batches for about 1 to 1 1/2 minutes each until wilted. Squeeze out excess liquid and set aside.
  2. In a large pan, melt the butter over medium heat.
  3. Add the minced shallot and garlic. Season with black pepper and nutmeg. Sauté for 2-3 minutes without browning.
  4. Whisk in the flour and cook for 2 minutes to remove the raw flour taste.
  5. Slowly pour in the heavy cream, whisking constantly. Simmer until the mixture thickens slightly.
  6. Gradually add Parmesan cheese, stirring until fully melted and smooth. Taste and adjust for salt, if needed.
  7. Add the spinach and toss to coat evenly. Cook for just a minute or two until warmed through.
  8. Serve immediately, garnished with extra Parmesan cheese and cracked black pepper.

Notes

  • Easily replace fresh spinach with frozen. Thaw according to package directions and be sure to squeeze out any excess water.
  • Slowly incorporate the Parmesan cheese to reduce the risk of clumping.
  • Taste for salt after incorporating the cheese. 
  • Once the spinach is incorporated, just warm through for a minute or two. Do not over cook.
