Description
This Steakhouse Creamed Spinach side dish is the perfect combination of tender spinach, creamy Parmesan sauce, and aromatic spices. It’s easy to make, and delivers restaurant-quality taste in the comfort of your home.

- 20 ounces fresh baby spinach
- 2 1/2 tablespoons butter
- 1 small shallot, minced
- 3 garlic cloves, minced
- 1 teaspoon black pepper
- 1 teaspoon ground nutmeg
- 1 1/2 tablespoons flour
- 2 cups heavy whipping cream
- 3/4 cup freshly grated Parmesan cheese, plus more for garnish
- Cracked black pepper, for garnish
Instructions
- In a microwave-safe bowl, microwave the spinach in batches for about 1 to 1 1/2 minutes each until wilted. Squeeze out excess liquid and set aside.
- In a large pan, melt the butter over medium heat.
- Add the minced shallot and garlic. Season with black pepper and nutmeg. Sauté for 2-3 minutes without browning.
- Whisk in the flour and cook for 2 minutes to remove the raw flour taste.
- Slowly pour in the heavy cream, whisking constantly. Simmer until the mixture thickens slightly.
- Gradually add Parmesan cheese, stirring until fully melted and smooth. Taste and adjust for salt, if needed.
- Add the spinach and toss to coat evenly. Cook for just a minute or two until warmed through.
- Serve immediately, garnished with extra Parmesan cheese and cracked black pepper.

Notes
- Easily replace fresh spinach with frozen. Thaw according to package directions and be sure to squeeze out any excess water.
- Slowly incorporate the Parmesan cheese to reduce the risk of clumping.
- Taste for salt after incorporating the cheese.
- Once the spinach is incorporated, just warm through for a minute or two. Do not over cook.
