What is Crema?

In the context of Mexican cuisine, “crema” refers to a dairy-based condiment that plays a pivotal role in enhancing the flavors and textures of various dishes. Unlike the heavy consistency of sour cream, Mexican crema possesses a lighter and smoother texture, making it an ideal accompaniment for a wide array of traditional dishes.

Mexican crema can be found in the refrigerated section of most grocery stores, or Mexican markets. This versatile condiment adds a delightful creamy element while also imparting a subtle tanginess that complements the bold and vibrant flavors of Mexican cuisine.

How to Make Avocado Lime Crema

To create this tantalizing Avocado Lime Crema, gather the following ingredients (most of which you probably have on hand):

  • 1 ripe avocado
  • 1 lime (juice and zest)
  • 8-ounces Mexican Crema, sour cream or Greek yogurt
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh cilantro for garnish
  • 1 clove garlic (minced), optional

Instructions:

Follow these simple steps to prepare the Avocado Lime Crema:

  1. Prepare the Avocados: Cut the ripe avocados in half, remove the pit, and scoop out the flesh into a food processor.
  2. Add Lime Zest and Juice: Zest the lime and add to the avocado along with the juice. Lime juice not only adds a zesty kick but also prevents the avocados from browning.
  3. Incorporate Mexican Crema, Sour Cream or Greek Yogurt: Add the sour cream or Greek yogurt to the avocado mixture. These dairy components enhance the creaminess and balance the flavors.
  4. Add Minced Garlic: Optional. Incorporate the minced garlic into the mixture for a subtle hint of savory complexity.
  5. Season: Sprinkle in salt and pepper according to your taste preferences. Remember, a little goes a long way, so start with a small amount and adjust as needed.
  6. Cilantro: For an extra burst of freshness, sprinkle in fresh cilantro.
  7. Spice: Add a touch of cayenne pepper, fresh jalapeño peppers, or Sriracha, for heat.
  8. Blend: Blend to achieve a smooth and consistent texture.

How to Store Avocado Crema

To ensure the freshness and quality of your Avocado Lime Crema, proper storage is crucial:

  1. Air-Tight Container: Transfer the crema into an air-tight container. This prevents air exposure, which can lead to oxidation and browning.
  2. Lime Juice Cover: If storing in a container, press a sheet of plastic wrap directly onto the surface of the crema before sealing the container. This minimizes contact with air, preserving its vibrant green color.
  3. Refrigeration: Place the container in the refrigerator. Avocado Lime Crema can last for up to 2-3 days when refrigerated properly.
