This Steak in Brown Gravy is a hearty, comforting, and budget-friendly dinner that’s perfect for feeding a hungry family. It’s one of those timeless dishes that brings back memories, as my mom used to make this for us growing up. I still remember how the smell of the simmering gravy would fill the house.

Made with thin strips of steak simmered in a rich brown gravy with mushrooms, onions, and a few fresh vegetables for added depth, it’s the kind of easy weeknight meal you’ll want to make again and again. Serve this steak in brown gravy over fluffy rice or egg noodles for a cozy, filling dinner that won’t break the bank.

Why You Should Make This Steak in Brown Gravy Recipe

  • Budget-Friendly and Filling: This easy steak and gravy recipe uses top round steak, an affordable cut of beef, simmered until tender in a homemade brown gravy that is perfect for feeding the whole family, without spending a fortune.
  • Great for Meal Prep: The rich brown gravy keeps the steak moist, making it ideal for reheating. It stores well and tastes even better the next day, which makes it great for meal planning or batch cooking.
  • Comfort Food Classic: Nothing says comfort like a plate of saucy beef and rice. This dish is cozy, savory, and satisfying, just like your favorite diner-style steak tips with gravy.
  • Easy Ingredients, Big Flavor: Simple pantry staples like garlic powder, flour, and Worcestershire sauce build tons of flavor, without requiring complicated steps or ingredients.
  • Feeds a Crowd: This is an ideal and affordable steak dish for larger families. It easily doubles and stretches well when served over rice or noodles.

Ingredients

  • Top Round Steak: You can substitute with sirloin, flank steak, or even stew meat, for a more budget-friendly option.
  • Salt, Black Pepper, Garlic Powder: Adjust to taste. You can add onion powder or smoked paprika for extra flavor.
  • Flour: Use cornstarch or gluten-free flour blend as a thickener, if needed.
  • Olive Oil: Substitute with vegetable oil, avocado oil, or even butter.
  • White Onion: Yellow onions or shallots can also be used.
  • Mushrooms: Cremini, button, or portobello mushrooms work well, or feel free to omit.
  • Beef Stock: Chicken stock or vegetable broth can be used in a pinch, but beef stock gives the deepest flavor.
  • Worcestershire Sauce: Soy sauce or coconut aminos are suitable substitutes.
  • Green Pepper: Use red, yellow, or orange bell peppers depending on what you have.
  • Tomato: Canned whole tomatoes or cherry tomatoes will also work.

How to Prepare Steak in Brown Gravy

  1. Slice the steak into thin strips.

  3. Toss with flour to fully coat each piece.
  4. Heat olive oil in a deep sauté pan.
  5. Add the steak and sear until almost fully cooked.

  7. Pour in beef stock and Worcestershire sauce. Scrape up any browned bits from the pan.
  8. Add the green pepper and halved tomato.
  9. Partially cover and simmer on medium-low heat, stirring occasionally, until the steak is tender. This will take about 30 minutes, or so.
  10. Remove green pepper and crush any large tomato pieces with the back of a spoon.
  11. Stir in fresh parsley.
  12. Serve over steamed rice or buttered noodles, garnished with more parsley.

How to Serve and Store Leftovers

  • Serving Suggestions:
  • Leftover Storage:
    • Store leftover steak in brown gravy in an airtight container in the fridge for up to 4 days.
    • Reheat gently on the stovetop or in the microwave with a splash of water or beef stock to loosen the gravy.
    • Freeze in freezer-safe containers for up to 2 months. Thaw overnight in the fridge before reheating.

Frequently Asked Questions

  • Can I make this in a slow cooker? Yes! Brown the steak and sauté the vegetables first, then transfer everything to a slow cooker and cook on low for 6–8 hours.
  • Can I use a different cut of beef? Absolutely. Sirloin, flank steak, or stew meat will work. Just adjust simmer time based on tenderness. Filet or ribeye can also be used and will not require as much cook time, but will be more expensive.
  • Can I make this gluten-free? Yes! Use a gluten-free flour blend for coating the steak and ensure your Worcestershire sauce is gluten-free.
  • What can I use instead of mushrooms? If you don’t like mushrooms, try using zucchini, or skip them entirely.
  • How do I thicken the gravy more? Simmer uncovered a bit longer, or stir in a slurry made from a teaspoon cornstarch mixed with two teaspoons water.
