Frequently Asked Questions

  • Do I need to activate the yeast first? No. The yeast activates during the long rest time, making this recipe extra simple.
  • Why bake the bread in a Dutch oven? The Dutch oven traps steam, which helps create a crisp crust while keeping the inside soft and chewy.
  • What can I use instead of a Dutch oven? If you don’t have a Dutch oven, you can bake this bread using a few alternatives. A heavy oven-safe pot with a tight-fitting lid works well. You can also use a cast iron skillet covered tightly with foil, or bake the bread on a preheated baking stone or sheet pan. When using a stone or pan, place a separate oven-safe pan filled with hot water on the lower rack to create steam, which helps develop a crust similar to a Dutch oven.
  • Can I use all-purpose flour instead of bread flour? Yes. Bread flour will give a slightly chewier texture, but all-purpose flour works perfectly.
  • Why should I wait before slicing? Cooling allows the crumb to set properly. Slicing too soon can make the inside gummy.
