Golden and crunchy on the outside with a creamy, cheesy center, they’re an easy way to give yesterday’s side dish a whole new life. These potato pancakes are perfect for breakfast, lunch, dinner, or even as an appetizer.

These crispy Potato and Cheese Pancakes prove that leftovers can be just as exciting as the original meal. With a golden Parmesan crust, creamy Gruyère throughout, and a simple finish of sour cream, parsley, and flaky salt, they’re an easy recipe you’ll find yourself making anytime you have mashed potatoes in the refrigerator.   5. Working in batches, place the potato pancakes in the skillet without overcrowding the pan. Cook for 3 to 4 minutes per side, or until deep golden brown and crispy.
  6. Transfer to a paper towel-lined plate. If making multiple batches, add an additional teaspoon of olive oil, only if the skillet becomes dry.
  7. Garnish with fresh parsley, a light sprinkle of flaky salt, and serve warm with a generous dollop of sour cream.

Turn leftover mashed potatoes into crispy, golden Potato and Cheese Pancakes made with Gruyère, Parmesan, and a dollop of sour cream for the perfect side dish or appetizer.

  • 1 large egg
  • 1 to 2 teaspoons finely grated onion
  • ⅓ cup freshly grated Gruyère cheese
  • ¼ cup freshly grated Parmesan cheese
  • ¼ cup all-purpose flour (plus 1 to 2 tablespoons if needed)
  • ½ teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley, plus more for garnish
  • 1/4 teaspoon salt, plus more for finishing
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon butter
