PASTA WITH BROCCOLI

Ingredients

  • 1 Package Birdseye frozen broccoli florets
  • 4 cloves garlic
  • 2 TBLS light olive oil plus more for drizzling
  • McCormick Crushed Red Pepper
  • 1 lb. DeCecco linguine
  • Freshly grate Parmesan cheese
  • Kosher salt/Pepper

I used to make this Pasta with Broccoli all the time. Somehow, I completely forgot about it…something sparked my memory the other day, and I had to dig deep to remember how to make it. I forgot just how simple and delicious it was.

In the time it takes you to cook the pasta…this awesomeness is done! You can eat it alone or as a side dish with your favorite protein. I paired mine with a fabulous Chicken Cordon Bleu.

Start boiling water for the pasta. Place your frozen broccoli in the microwave for three minutes. I love these frozen broccoli florets from Birdseye. Remove and drain liquid. Chop the broccoli into fine pieces.

Drop pasta…do NOT forget to salt your pasta water! Peel and slice up the garlic. I cut each clove in half and then slice thin. Heat up the olive oil in a pan…add the garlic and allow to warm up in the oil for about a minute or so. Add in a few dashes of the crushed red pepper and saute for another minute…try not to burn the garlic.

Add in the broccoli and another touch of olive oil. Season with black pepper…you should not need additional salt…you will get enough saltiness from the pasta water. Saute for another few minutes. Add a ladle and a half of the pasta water directly into the broccoli mixture…stir and allow to simmer for at least 5 minutes or until the pasta is al dente. As the mixture is simmering, keep breaking down the broccoli.

You should be able to time everything just right, so that you can add the pasta directly from the pot into the broccoli.

Toss and top with freshly grated Parmesan cheese and a touch more of olive oil! ENJOY!
