How to Prepare Easy Homemade Chicken Piccata

  1. Season the chicken on both sides with half of the salt and pepper.
  2. Dredge the chicken in the flour mixture.
  3. Heat the olive oil and two tablespoons of butter in a pan over medium-high heat.
  4. Once hot, sear the chicken on both sides until fully-cooked (about 3-4 minutes per side). Transfer to a platter.
  5. In the same pan, pour in the chicken stock and lemon juice. Add two more tablespoons of butter and allow to thicken for a few minutes.
  6. Add the capers and fresh parsley to the pan. Add a few more tablespoons of butter.
  7. If the sauce is too thick, add in a touch more stock.
  8. Once melted, add the chicken back to the pan to warm through.
  9. Add the sliced lemons and spoon the sauce onto the chicken.
  10. Transfer the chicken to a platter.
  11. Spoon the remaining sauce over the chicken and garnish with fresh parsley and serve with the lemon wedges.

Easy Homemade Chicken Piccata

Ingredients

  • 2 boneless chicken breasts
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1/3 cup flour
  • 2 tablespoons rice flour or cornstarch
  • 2 tablespoons olive oil
  • 6 tablespoons butter, divided
  • 3/4 cup chicken stock
  • 1 tablespoon lemon juice
  • 2 tablespoons capers, rinsed and drained
  • 1 tablespoon fresh chopped parsley, plus more for garnish
  • 1 whole lemon, sliced

Instructions

  1. Slice the chicken breasts in half, creating two thin pieces from each breast. Pat dry and season on both sides with half of the salt and pepper.
  2. Combine the flour, cornstarch, and remaining salt and pepper on a plate. Dredge the chicken in the mixture.
  3. Heat the olive oil and two tablespoons of butter in a pan over medium-high heat.
  4. Once hot, sear the chicken on both sides until fully-cooked (about 3-4 minutes per side). Transfer to a platter.
