Ingredients
- 2 boneless chicken breasts
- 1/2 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 1/3 cup flour
- 2 tablespoons rice flour or cornstarch
- 2 tablespoons olive oil
- 6 tablespoons butter, divided
- 3/4 cup chicken stock
- 1 tablespoon lemon juice
- 2 tablespoons capers, rinsed and drained
- 1 tablespoon fresh chopped parsley, plus more for garnish
- 1 whole lemon, sliced
Instructions
- Slice the chicken breasts in half, creating two thin pieces from each breast. Pat dry and season on both sides with half of the salt and pepper.
