- 2 boneless chicken breasts
- 1/2 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 1/3 cup flour
- 2 tablespoons rice flour or cornstarch
- 2 tablespoons olive oil
- 6 tablespoons butter, divided
- 3/4 cup chicken stock
- 1 tablespoon lemon juice
- 2 tablespoons capers, rinsed and drained
- 1 tablespoon fresh chopped parsley, plus more for garnish
- 1 whole lemon, sliced
Instructions
- Slice the chicken breasts in half, creating two thin pieces from each breast. Pat dry and season on both sides with half of the salt and pepper.
- Combine the flour, cornstarch, and remaining salt and pepper on a plate. Dredge the chicken in the mixture.
- Heat the olive oil and two tablespoons of butter in a pan over medium-high heat.
- Once hot, sear the chicken on both sides until fully-cooked (about 3-4 minutes per side). Transfer to a platter.
- In the same pan, pour in the chicken stock and lemon juice. Add two more tablespoons of butter and allow to thicken for a few minutes.
- Add the capers and fresh parsley to the pan. Add a few more tablespoons of butter.
- If the sauce is too thick, add in a touch more stock.
- Once melted, add the chicken back to the pan to warm through.
- Add the sliced lemons and spoon the sauce onto the chicken.
- Transfer the chicken to a platter.
- Spoon the remaining sauce over the chicken and garnish with fresh parsley and serve with the lemon wedges.
- Serve with pasta, rice, steamed vegetables, or a side salad.
