Ingredients
- 2 boneless chicken breasts, diced
- 2 tablespoons olive oil, divided
- 1 cup broccoli florets
- 1 cup whole mushrooms, halved
- 1 small zucchini, sliced into rounds then halved
- 1/3 cup red onion, diced
- 1/2 cup red bell pepper, chopped
- 1/2 cup green bell pepper, chopped
- 1/2 cup snow peas (optional)
- 2 tablespoons fresh chopped parsley
- Steamed rice for serving (microwavable for ease)
For the seasoning blend:
- 1 tablespoon paprika
- 2 tablespoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
Instructions
- Preheat the air fryer to 400°F (200°C).
