This air fryer dinner is like a one-pan meal, but faster, healthier, and with less mess to clean up. The chicken and vegetables cook together perfectly, making this a go-to recipe for busy weeknights.

How to Prepare Air Fryer Chicken and Vegetables

  1. As the air fryer is preheating to 400°F (200°C), dice the chicken and cut the vegetables.
  2. Place the chicken and vegetables in a large bowl. Pour in the olive oil and sprinkle the seasoning blend over the mixture.
  3. Toss everything together to evenly coat the chicken and vegetables.
  4. Place the chicken and vegetables into the air fryer basket and cook for 10-12 minutes, shaking the basket a few times during the air frying process.
  5. The chicken should be cooked through, and the vegetables should be tender.
  6. Garnish with fresh parsley and serve over steamed rice.

Oven Method

If you do not have an air fryer, but still want to enjoy this Chicken and Vegetables dish, here’s how to prepare in the oven:

  • Spread the chicken and vegetables in an even layer on a baking sheet lined with parchment paper or foil.
  • Bake at 425°F (220°C) for 20-25 minutes, stirring halfway through, until the chicken is fully cooked and the vegetables are tender.

How to Serve and Store

  • Serve with Sauces: Pair with Yum Yum sauce, sweet chili sauce, or a light drizzle of olive oil for extra flavor.
  • Rice Option: Use microwavable steamed rice for a quick serving option.

When you’re short on time but still want a delicious, healthy meal, this Air Fryer Chicken and Vegetables recipe is perfect. With everything tossed together in the air fryer, you’ll have dinner on the table in just 15 minutes!


Ingredients

Scale
  • 2 boneless chicken breasts, diced
  • 2 tablespoons olive oil, divided
  • 1 cup broccoli florets
  • 1 cup whole mushrooms, halved
  • 1 small zucchini, sliced into rounds then halved
  • 1/3 cup red onion, diced
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup snow peas (optional)
  • 2 tablespoons fresh chopped parsley
  • Steamed rice for serving (microwavable for ease)

For the seasoning blend:

  • 1 tablespoon paprika
  • 2 tablespoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat the air fryer to 400°F (200°C).
  2. As the air fryer is preheating, dice the chicken into bite-sized pieces. Cut the vegetables as instructed.
  3. Combine the spice mixture in a small bowl.
  4. Place the chicken and vegetables in a large bowl. Pour in the olive oil and sprinkle the seasoning blend over the mixture.
  5. Toss everything together to evenly coat the chicken and vegetables.
  6. Place the chicken and vegetables into the air fryer basket and cook for 10-12 minutes, shaking the basket a few times during cooking.
  7. The chicken should be cooked through, and the vegetables should be tender.
  8. Garnish with fresh parsley and serve over steamed rice.
