BEST METHOD FOR HARD BOILING EGGS
Seriously, ask around and you may find everyone has a slightly different technique for hard boiling eggs. Here’s how I hard boil eggs:
- place eggs in a pot and fill with cold water to about 1″ above the eggs
- add in a teaspoon of salt
- bring to a boil and place lid
- remove from heat
- for jammy eggs, set timer for 6 to 7 minutes
- for firmer eggs, 8 to 10 minutes
PERFECTLY PEELED HARD BOILED EGGS
Some say use older eggs as opposed to “fresher” eggs. Maybe, maybe not. In my opinion, peeling a hard boiled egg perfectly, is all about technique!
Do you find that every time you peel a hard boiled egg, the shell manages to destroy the white part of the egg? If so, try submerging the cooked eggs into a cold ice bath. Allow the eggs to sit in the cold water for a few minutes. Peel under cold, running water. Ultimately, the eggshell should peel away, perfectly. Well, most of the time!
INGREDIENTS
The creaminess of the eggs and Kewpie mayo, the heat from the Sriracha and jalapeños, and the vibrancy of the mustard microgreens all come together perfectly in this kicked up egg salad recipe!
Eggs: Eggs are the heart of this recipe, providing a rich and creamy base. Mayo: Since being introduced to Kewpie mayo, I can honestly say it’s my favorite mayonnaise to use in both Tuna Salad and Egg Salad. This Japanese brand of mayonnaise has gained popularity internationally for its unique flavor and creamy texture.

Ingredients
- 7 hard boiled eggs
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons sweet relish
- 1 to 2 teaspoons diced jarred jalapeños
- 3/4 cup Kewpie mayonnaise
- 1 teaspoon Sriracha
Instructions
- Hard boil the eggs. Once peeled and diced, add to a large bowl.
- Season the eggs with salt and pepper.
- Add in the sweet relish, jarred jalapeños and about half of the mayo. Gently mix.
- Check consistency. Add in the remaining mayo (or more if you like the salad creamier) and the Sriracha.
- Gently mix. Taste for salt.
