  • 12 Twin Dragon Egg Roll Wrappers
  • 5 hot sausage links (1lb. 3 oz), casings removed
  • 1 red pepper, diced small
  • 1 green pepper, diced small
  • 1/4 white onion, diced small
  • 1 teaspoon kosher salt
  • pinch of red pepper flakes, optional
  • 1 1/2 Cup mozzarella cheese, shredded
  • 1 egg
  • 1/2 teaspoon water
  • oil for frying
  • Parmesan cheese, freshly grated for garnish
  • 1 Tablespoon fresh basil, chiffonade
  • marinara sauce, for dipping

Recently, I entered a recipe challenge with JSL Foods using their Twin Dragon Wrapper products. I was tasked to create a recipe for a Game Day Appetizer. Growing up, sausage and peppers were a staple at any Steelers tailgate party. Honestly, it is still one of my favorite meals. Immediately, I thought this would make for the most perfect egg roll. Honestly, these Sausage and Peppers Egg Rolls were outstanding. This recipe will yield a dozen egg rolls. Allow for at least two egg rolls per person.

Remove the hot sausage from the casings. If you are averse to heat, replace the hot sausage with mild, or sweet. Also, in my opinion, sausage links have more flavor than bulk. However, bulk sausage can be used as a substitute. Place sausage in pan and break apart. Once the sausage is almost fully cooked, place in a chopper. Pulse to grind.

Add the sausage back to the pan along with the diced peppers, onions and kosher salt. For added heat, sprinkle in a few crushed red pepper flakes. Cook for a few minutes, or just until the vegetables are tender. Remove sausage mixture from pan. Drain any excess grease.

Create an egg wash in a small bowl with the egg and water. Lay one Twin Dragon Egg Roll Wrapper onto a flat surface with a corner closest to you. Fill that end with a few generous spoonfuls of the sausage mixture. Top with shredded mozzarella cheese. Fold over. Next, fold in the sides. Roll tightly leaving a little space at the end. Brush the inside edge with the egg wash. Continue to roll and seal. Repeat with the remaining egg roll wrappers.

While you are rolling the egg rolls, heat enough oil in a pot or pan, to cover the egg rolls. Place the egg rolls into the hot oil. Brown on all sides. This will require to flip and hold with tongs to ensure all the edges are browned. Place on paper towels to drain excess oil.

Pile the Sausage and Peppers Egg Rolls onto a platter. Garnish with fresh basil and freshly grated Parmesan cheese. Serve with a side of your favorite marinara sauce. ENJOY!

Our life has changed dramatically in the past few years with the passing of our two goldendoodles, Vegas and Viva. We were lucky enough to have Vegas for five years (totally wish it was longer). Most recently, losing our Viva to a brain tumor in July of 2020. We welcomed our mini goldendoodle 7, almost seven years ago. We just added the amazing Hazel!
