Sausage and Peppers are one of those foods I grew up eating quite often growing up in Pittsburgh. So, it was only natural to try and create this flavorful combination inside of a crispy egg roll.

Ingredients and Substitutions

These ingredient substitutes offer flexibility for personal preferences, dietary restrictions and/or ingredient availability, allowing you to tailor the recipe to your taste and needs.

  • Egg Roll Wrappers: Easily substitute with spring roll wrappers or rice paper wrappers.
  • Sausage: Use ground pork or chicken sausage. For a vegetarian egg roll, use crumbled firm tofu or a plant-based protein.
  • Bell Peppers: Try different colors of bell peppers or poblano/Anaheim peppers for mild spice.
  • Onion: Any variety of onion or even shallots can be used. Use green onions for a milder alternative.
  • Mozzarella Cheese: Substitute with provolone or cheddar, or for vegan egg rolls, use a dairy-free cheese alternative.
  • Oil for Deep Frying: Vegetable oil, canola oil, or peanut oil. Air fry egg rolls for a lighter alternative.

How to Make Sausage and Peppers Egg Rolls

  1. Remove the hot sausage from the casings. Break apart while browning. 
  2. Pulse the cooked sausage in a food processor to achieve a fine grind.
  3. Return the sausage to the pan, add the diced peppers, onions and salt. Cook until vegetables soften.
  4. Transfer to a paper towel lined plate to drain off excess grease. Allow to cool, slightly.
  5. Create an egg wash by combining one egg with a teaspoon of water.
  6. Lay an egg roll wrapper on a flat surface with a point closest to you. Fill that end with a few spoonfuls of the sausage mixture. Top with shredded mozzarella. Fold over tightly. Fold in the sides. Brush the inside top edge with an egg wash. Continue rolling to seal tightly. 
  7. Cover with a damp paper towel as you finish rolling the remaining. 
  8. Heat oil in a pot for deep frying. Fry the egg rolls until crispy and brown on all sides. Drain excess oil on a rack or paper towels.
  9. Add the egg rolls to a platter. 
  10. Garnish with Parmesan cheese and fresh basil. Serve with warmed marinara sauce.

Air Fryer Egg Rolls

As an alternative to frying, try making this game day appetizer in the air fryer:

  • Lightly coat the air fryer basket with cooking spray.
  • Preheat the air fryer to 375°F (190°C).
  • Place the egg rolls in a single layer, leaving space between them.
  • Lightly spray the egg rolls with cooking spray.
  • Air fry for 8-10 minutes, flipping halfway through, until golden and crispy.

Alternatively, place the egg rolls on a parchment-lined baking sheet and bake in the oven at 400°F (200°C) for 15-20 minutes.

How to Store Leftover Egg Rolls

If you happen to have leftovers, store them in an airtight container in the refrigerator. To reheat, use an oven or toaster oven to maintain that coveted crispiness. You can also freeze the egg rolls for future snacking, just pop them in the oven straight from the freezer for a quick and delicious treat.

Ingredients

  • 12 egg roll wrappers
  • 1 pound hot or mild sausage links (casing removed)
  • 1 red or orange bell pepper, diced
  • 1 green bell pepper, diced
  • 1/4 white onion, minced
  • 1/2 teaspoon kosher salt
  • 1 cup shredded mozzarella cheese
  • egg wash (1 egg + 1 teaspoon water)
  • canola oil for deep frying
  • 2 tablespoons freshly grated Parmesan cheese (for garnish)
  • 1 tablespoon fresh chiffonade basil (for garnish)
  • 1 cup marinara sauce for dipping
