- 12 egg roll wrappers
- 1 pound hot or mild sausage links (casing removed)
- 1 red or orange bell pepper, diced

- egg wash (1 egg + 1 teaspoon water)
- canola oil for deep frying
- 2 tablespoons freshly grated Parmesan cheese (for garnish)
- 1 tablespoon fresh chiffonade basil (for garnish)
- 1 cup marinara sauce for dipping
Instructions
- Remove the hot sausage from the casings. Break apart while browning.
- Pulse the cooked sausage in a food processor to achieve a fine grind.
- Return the sausage to the pan, add the diced peppers, onions and salt. Cook until vegetables soften.
- Transfer to a paper towel lined plate to drain off excess grease. Allow to cool, slightly.
- Create an egg wash by combining one egg with a teaspoon of water.
- Lay an egg roll wrapper on a flat surface with a point closest to you. Fill that end with a few spoonfuls of the sausage mixture. Top with shredded mozzarella. Fold over tightly. Fold in the sides. Brush the inside top edge with an egg wash. Continue rolling to seal tightly.
- Cover with a damp paper towel as you finish rolling the remaining.
- Heat oil in a pot for deep frying. Fry the egg rolls until crispy and brown on all sides. Drain excess oil on a rack or paper towels.
- Add the egg rolls to a platter.
- Garnish with Parmesan cheese and fresh basil. Serve with warmed marinara sauce.
