Aside from the incredible combination of flavors, this potato dish is incredibly easy to prepare. While the potatoes are baking, easily whip together the sour cream sauce and prepare the maple glazed salmon bites in the air fryer.
How to Make a Traditional Baked Potato
Gone are the days when you wrap a potato in aluminum foil and bake in the oven. Did you know, using this method will steam the potato and not allow the potato to bake, properly? Russet or Idaho potatoes are best for baking.
Want to make the most incredible baked potato? Follow this method:
- Scrub the potato and dry completely with a paper towel.
- Coat the outside of the potato with olive oil and coarse salt.
- Bake for 45-60 minutes, or until the potato is fork tender.
- TIP: Using a flat cast iron pan makes for a wonderful crispy bottom on the baked potato.
Let’s Talk Salmon
Typically, Faroe Island salmon is my go-to when creating salmon recipes. This type of salmon is farm-raised. However, it is raised in a contained area of the salmon’s natural habitat. The fat lines in this salmon make it difficult to overcook, and become dry.
If you are looking for a sustainable, wild-caught salmon alternative, King (Chinook) salmon is a great option. Sockeye has a rich flavor and texture and can also be used in this Maple Glazed Baked Potato recipe.

How to Make Salmon in the Air Fryer
If you have never tried Air Fryer Salmon, you must! It’s a super quick and easy way to prepare salmon.
To prepare these maple glazed salmon bites using the air frying, follow these steps:
- If needed, preheat the air fryer to 400°F (200°C).
- Spray the inside of the basket with non-stick spray.
- Place the coated salmon bites into the air fryer basket (may have to prepare in batches depending on the size of the air-fryer).
- Air fry the salmon for about 6-8 minutes.
- Alternatively, place the salmon bites on a baking sheet and bake at 400°F (200°C) for about 6-8 minutes.
How to Finish, Serve and Store Salmon Baked Potato
To serve this Maple Glazed Salmon Baked Potato:
- While the potato is still how, cut a slit down the middle.
- Holding the potato with a kitchen towel, slam the potato onto a flat surface (slit side down).
- Place the potato onto a dish and fluff. Top with butter.
- Add 1/2 of the maple glazed salmon bites to each potato.
- Garnish with fresh chopped parsley and drizzle on the sour cream sriracha sauce.
This delightful baked potato salmon dish stands as a complete meal on its own. You can also pair with:
- side salad
- roasted vegetables
For storage, keep any leftover maple-glazed salmon bites and sour cream sriracha sauce separately in airtight containers in the refrigerator for up to 2 days. Reheat the salmon bites in the air fryer or oven to maintain their crispy texture.

Ingredients
- 2 medium to large-sized Idaho or Russet potatoes
- 1 tablespoon olive oil
- 2 teaspoons coarse salt
- 1 pound skinless salmon fillet
- 1/2 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 tablespoon olive oil
- 1/3 cup real maple syrup
- 3/4 cup light sour cream
- 1 tablespoon plus sriracha sauce
- 4 tablespoons butter
- 1 tablespoon fresh chopped parsley
Instructions
- Preheat the oven to 400°F (200°C).
- Scrub the potatoes thoroughly to remove any dirt, then pat them dry with a paper towel.
- Rub the potatoes with olive oil and sprinkle them evenly with coarse salt.
- Place on a cast iron pan, or baking sheet. Bake for at least 45 minutes, or until fork-tender.
- While the potatoes are baking, prepare the sour cream sriracha sauce. Mix together the sour cream and sriracha. Adding more/less, to your liking. Refrigerate the sauce until serving.
- Cut the salmon fillet into 1-inch bite-sized pieces and place them in a bowl.
- Season the salmon with salt, black pepper, garlic powder, onion powder, and paprika.
- Add the olive oil and maple syrup. Gently toss to coat the salmon bites thoroughly.
- If necessary, preheat the air fryer to 400°F (200°C).Place the seasoned salmon bites in the air fryer basket and air fry for 6 to 8 minutes, until they are cooked through (You may need to cook the salmon bites in batches, depending on the size of your air fryer).
- Once the baked potatoes are done, while they’re still hot, cut a slit down the middle of each potato.
- Using a kitchen towel, pound the potato (slit side down) on a flat surface.
- Open the potato on a serving dish. Top with butter, allowing it to melt inside.
- Divide the air fryer maple-glazed salmon bites evenly onto each prepared potato.
- Garnish with freshly chopped parsley and drizzle the sour cream sriracha sauce over the top.
- ENJOY!
