Description

Take a traditional baked potato to a whole new level with this Air Fryer Maple Glazed Salmon Baked Potato with Sour Cream Sriracha Sauce recipe. Aside from the incredible combination of flavors, this potato dish is incredibly easy to prepare.


Ingredients

  • 2 medium to large-sized Idaho or Russet potatoes
  • 1 tablespoon olive oil
  • 2 teaspoons coarse salt
  • 1 pound skinless salmon fillet
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 tablespoon olive oil
  • 1/3 cup real maple syrup
  • 3/4 cup light sour cream
  • 1 tablespoon plus sriracha sauce
  • 4 tablespoons butter
  • 1 tablespoon fresh chopped parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes thoroughly to remove any dirt, then pat them dry with a paper towel.
  3. Rub the potatoes with olive oil and sprinkle them evenly with coarse salt.
  4. Place on a cast iron pan, or baking sheet. Bake for at least 45 minutes, or until fork-tender.
  5. While the potatoes are baking, prepare the sour cream sriracha sauce. Mix together the sour cream and sriracha. Adding more/less, to your liking. Refrigerate the sauce until serving.
  6. Cut the salmon fillet into 1-inch bite-sized pieces and place them in a bowl.
  7. Season the salmon with salt, black pepper, garlic powder, onion powder, and paprika.
  8. Add the olive oil and maple syrup. Gently toss to coat the salmon bites thoroughly.
  9. If necessary, preheat the air fryer to 400°F (200°C).Place the seasoned salmon bites in the air fryer basket and air fry for 6 to 8 minutes, until they are cooked through (You may need to cook the salmon bites in batches, depending on the size of your air fryer).
  10. Once the baked potatoes are done, while they’re still hot, cut a slit down the middle of each potato.
  11. Using a kitchen towel, pound the potato (slit side down) on a flat surface.
  12. Open the potato on a serving dish. Top with butter, allowing it to melt inside.
  13. Divide the air fryer maple-glazed salmon bites evenly onto each prepared potato.
  14. Garnish with freshly chopped parsley and drizzle the sour cream sriracha sauce over the top.

Notes

  • Thoroughly scrub and dry the potatoes before baking for a crispy skin.
  • Cook salmon in batches in the air fryer to avoid overcrowding.
  • Monitor salmon closely during air frying due to quick cooking.
