How to Make Pancakes Stuffed with Egg Yolks

This unique pancake recipe is all about technique. The key is patience. Do not be frustrated if it takes a few times to come out perfectly.

Over the years, I have experimented with many pancakes recipes. This one is by far, a no-fail recipe. Even if you do not want to try this technique, use this flapjack recipe to make the fluffiest pancakes.

  1. Mix together the pancake batter and allow to rest for at least 10 minutes.
  2. Separate the egg yolks from the whites and place yolks in a small bowl.
  3. Heat a non-stick pan over medium heat and add 2 tablespoons of melted butter.
  4. Spray the inside of a large biscuit cutter with non-stick spray. Place in the pan.
  5. Pour a small amount of pancake batter into the cutter.
  6. Drop two egg yolks into the center of the batter, followed by more batter to cover the yolks.
  7. Allow the pancake to set for a minute or two without disturbing it.
  8. Cover the pan with a lid and let it cook for another minute.
  9. Add a tablespoon of water to the pan and cover again, allowing steam to cook the pancake and create bubbles. Just another minute, or two.
  10. Once bubbles form on the surface, carefully remove the lid and gently flip the pancake.
  11. Cook for another minute until golden brown and the egg yolks are still runny, or cooked to your liking.
  12. Plate the Egg Yolk Stuffed Pancakes topped with butter and warm maple syrup.

Tips to Making Egg Yolk Stuffed Pancakes

  • Allow the Pancake Batter to Rest: For a fluffier, soufflé pancake, allow the batter to rest for at least 10 minutes. Also, try not to over mix the batter.
  • Egg Size: Large to jumbo-sized eggs work best in this recipe (if using a smaller biscuit cutter, use only one egg yolk).
  • Non-Stick Pan: Use a non-stick pan with a flat surface area.
  • Ensure Proper Heat: Maintain medium heat on the pan to ensure even cooking without burning the pancakes.
  • Use Non-Stick Spray: Apply non-stick spray to the biscuit cutter to prevent the batter from sticking to its edges.
  • Egg Yolks: Separate the egg yolks from the white and add the yolks into a small bowl. Use the egg whites for another recipe.
  • Carefully Add Yolks: Gently drop the egg yolks into the center of the batter to avoid breaking them.
  • Allow Time to Set: Let the pancake batter set for a minute or two before adding water. Cover with lid to allow the egg yolk to cook evenly.
  • Create Steam: Adding water to the pan and covering it helps create steam, aiding in cooking the pancake and forming bubbles.
  • Flip with Caution: Carefully flip the pancake to avoid splattering and ensure the egg yolk remains intact inside.
  • Monitor Cooking Time: Keep an eye on the pancake’s color and texture to achieve a golden brown exterior without overcooking the egg yolk.

How to Serve and Store Egg Yolk Stuffed Pancakes

For a complete breakfast, serve these delicious stuffed pancakes with any of the following, or a combination thereof:

  • Fresh Fruits: Serve alongside a medley of fresh fruits such as berries, sliced bananas, or citrus segments to add a refreshing element to the meal.
  • Breakfast Meats: Add a side of crisp bacon, sausage or ham.
  • Maple Syrup or Honey: Drizzle with your favorite syrup or honey to compliment the sweetness of the pancakes and add extra flavor.
  • Potatoes: Serve with hashbrowns or fried potatoes for a heartier breakfast.

Storing Egg Yolk Stuffed Pancakes:

  • For the best taste and texture, it’s recommended to enjoy the pancakes immediately after cooking.
  • If you have leftovers, allow the pancakes to cool completely, then store them in an airtight container in the refrigerator for up to 2-3 days.
  • When ready to eat, reheat the pancakes in a toaster, oven, or microwave until warmed through. Avoid overcooking to prevent them from becoming too dry.
  • If you’ve prepared more pancake batter than needed, store the remaining batter in an airtight container and use within a day or two.
