- 1 1/2 cups self-rising flour
- 1 tablespoon baking powder
- 1/8 teaspoon salt
- 1 egg
- 2 tablespoons sugar
- 2 tablespoons melted butter
- 1 1/4 cup milk
- 10–12 egg yolks
- 2 tablespoons butter for frying
Instructions
- Combine the self-rising flour, baking powder, and salt in a mixing bowl.
- In another bowl, whisk together the egg, sugar, melted butter and milk until well combined.
- Add the wet ingredients to the dry. Combine without over mixing.
- Set aside to rest for at least 10 minutes.
- Heat a non-stick pan over medium heat and add the butter. Allow the butter to melt and start to bubble.
- Spray the inside of a large biscuit cutter with non-stick spray. Place in the pan.
- Pour a small amount of pancake batter into the cutter.
- Drop two egg yolks into the center of the batter, followed by more batter to cover the yolks.
- Allow the pancake to set for a minute or two without disturbing it.
- Cover the pan with a lid and let it cook for another minute.
- Add a tablespoon of water to the pan and cover again, allowing the steam to cook the pancake and create bubbles.
- Once bubbles form on the surface, carefully remove the lid and gently flip the pancake.
- Cook for another minute to brown the other side.
- Plate the Egg Yolk Stuffed Pancakes. Add a touch of butter.
- Pour on warm maple syrup. Serve with sausage or bacon, and hashbrowns.

Notes
- Add the egg yolks to a small bowl for ease.
- Large to jumbo-sized eggs work best in this recipe.
- You can use a smaller sized biscuit cutter. If so, drop only one egg yolk into the batter.
- Feel free to experiment using the entire egg (I have not tried this, so let me know if you do!)
- Use a non-stick pan with a flat surface for cooking the pancake.
- Maintain medium heat for even pancake and egg cooking.
- Apply non-stick spray to the biscuit cutter to prevent sticking.
- Drop yolks gently into the pancake batter.
- Let the batter set before adding water.
- Add water to the pan to create steam for cooking.
- Cover with a lid when flipping the pancake.
- Be careful to maintain the yolk inside while flipping.
- Watch for golden brown color while cooking.
