CHEESY SPINACH DIP

Ingredients

  • 11 ounces fresh spinach
  • 8 ounces whipped cream cheese
  • 3/4 Cup sour cream
  • 1 garlic clove, grated
  • juice of 1/2 lemon
  • pinch of kosher salt
  • pinch of black pepper
  • 2 Cups shredded mozzarella cheese
  • 1/2 to 3/4 Cup Parmesan cheese, freshly grated
  • sourdough bread bowl, optional
  • crackers, vegetables, bread, for dipping

Yesterday, I was rather late to the game, so to speak. As I was updating my Super Bowl Party Food blog last week, I forgot to add a recipe for Cheesy Spinach Dip. Well, only because I wanted to make my very own Sourdough Bread Bowl. Definitely not something I can whip up in a few hours. However, I am glad I did not rush the process. Both the sourdough bread bowl and this fabulous Cheesy Spinach Dip were a match made in heaven. Of course, you do not have to go the extra mile and make your own bread. For ease, bake in an oven-safe dish and serve with cubed bread, tortilla chips, crackers and/or vegetables. Also, as an alternative, stop by your nearest Panera and pick up a sourdough bread bowl.

Funny, I was looking through all of my recipes and totally forgot I already had a recipe for Spinach Artichoke Dip. However, this recipe for Cheesy Spinach Dip is a bit different. As you can tell, I did fancy up the sourdough bread bowl by adding cheese to the top. I melted it under the broiler until the cheese turned a golden brown. Oh…I bet this cheesy bread bowl would be perfect for my Creamy Tomato Basil Soup.

HOW TO MAKE CHEESY SPINACH DIP

Preheat oven to 375°. Place the fresh spinach into a microwavable bowl. Microwave just until the spinach starts to wilt. This should only take a minute, or two. Squeeze out as much water as you can from the spinach. Chop. In a bowl, combine the cream cheese, sour cream, grated garlic, lemon juice, sour cream, kosher salt, black pepper, half of the mozzarella cheese, one-half cup of Parmesan cheese and the chopped spinach. Top with a touch more mozzarella and Parmesan cheese.

Place the spinach mixture into an oven-safe dish. Bake for about 20 minutes. If you are not using a bread bowl to serve the dip, turn on the broiler for a few minutes to brown the cheese, after the recommended bake time. No need to do this if you are transferring to a bread bowl.

BREAD BOWL

Cut the top off of the sourdough loaf. Hollow out the inside. Keep the bread pieces for dipping. Place the top back on. Add a handful of shredded mozzarella cheese to the top of the bread bowl. Place under broiler until all the cheese has melted down the sides of the bread and is browned.

Remove the lid of the bread bowl and fill with the warmed spinach dip. Place the bread bowl onto a pan and broil for another minute, or so to brown the dip. ENJOY this fabulous recipe for Cheesy Spinach Dip. It’s a perfect appetizer that will satisfy any crowd!
