AVOCADO TOAST

Ingredients

  • 2 slices dark rye or pumpernickel bread (keto bread is also an option)
  • 3 eggs
  • kosher salt/pepper
  • pinch of baking soda
  • 1 tablespoon butter
  • 1 avocado, cut into bite-sized pieces
  • 2 tablespoons chopped tomatoes
  • few sprinkles of everything bagel seasoning

Google Avocado Toast and you will find so many beautiful recipes. What some people can do with an avocado amazes me. Next on my list…master the art of cutting an avocado. Here is my version. Avocado Toast with Fluffy Scrambled Eggs, I should say. Eggs that were so super fluffy…I’ll let you in on my secret…baking soda and gently…I mean gently, scrambling the eggs…treat them like a baby, and they will come out so super soft and fluffy! Avocado Toast with eggs and tomatoes

Toast the bread. Since my Hubby has been on the Keto diet…I used a low-carb bread available at Aldi. If you are not following Keto…I recommend a dark rye, or even pumpernickel. Whisk the eggs in a bowl seasoned with salt, pepper and just a pinch of baking soda. The baking soda will produce bubbles in the eggs which helps to create a nice fluffy egg. The other key to fluffy eggs, scramble them gently!

In a non-stick pan, heat up a tablespoon of butter on medium. Pour in the whisked eggs. Gently fold the eggs with a spatula until they are set. Be very gentle! For my full Fluffy Scrambled Eggs recipe, click here!

Top the toast with the scrambled eggs. Add the chopped avocado and tomatoes on top of the eggs.

Sprinkle with everything bagel seasoning. ENJOY this low-carb version of Avocado Toast. Serve along side a few sausage links…bacon…or all by themselves!

Our life has changed dramatically in the past few years with the passing of our two goldendoodles, Vegas and Viva. We were lucky enough to have Vegas for five years (totally wish it was longer). Most recently, losing our Viva to a brain tumor in July of 2020. We welcomed our mini goldendoodle 7, almost seven years ago. We just added the amazing Hazel!
