Google Avocado Toast and you will find so many beautiful recipes. What some people can do with an avocado amazes me. Next on my list…master the art of cutting an avocado. Here is my version. Toast the bread. Since my Hubby has been on the Keto diet…I used a low-carb bread available at Aldi. If you are not following Keto…I recommend a dark rye, or even pumpernickel. Whisk the eggs in a bowl seasoned with salt, pepper and just a pinch of baking soda. The baking soda will produce bubbles in the eggs which helps to create a nice fluffy egg. The other key to fluffy eggs, scramble them gently!
In a non-stick pan, heat up a tablespoon of butter on medium. Pour in the whisked eggs. Gently fold the eggs with a spatula until they are set. Be very gentle! For my full Fluffy Scrambled Eggs recipe, click here!
Top the toast with the scrambled eggs. Add the chopped avocado and tomatoes on top of the eggs.
Sprinkle with everything bagel seasoning. ENJOY this low-carb version of Avocado Toast. Serve along side a few sausage links…bacon…or all by themselves!
