The other day, I had this overwhelming craving for Pimento Cheese. Since I have yet to create a recipe of my own, I thought I would hop on over to the grocery store and pick up one of my favorites. I had the pleasure of meeting John, founder of Queen Charlotte’s Pimento Cheese Royale, around the time he first started making pimento cheese in Charlotte back in 2004. Since then, his business has grown. He is now offering five different pimento cheese combinations. The bacon being one of my favorites! Now that fresh corn is also available, something in my head just told me to combine the two, and see what I could create. This Pimento Cheese Corn was one amazing creation.

So, if you hail from the North, you may have no clue about Pimento Cheese. In fact, I had never heard of it until I moved to Charlotte. Honestly, I am not much of a fan of pimentos. When I first met John, I begged him to make a batch without pimentos. For reals!

Basically, Pimento Cheese is a type of spread that is typically made using a mixture of cheeses, mayo and Pimentos. In the South, I have seen Pimento Cheese served with Fried Green Tomatoes, as a dip using crackers and/or pork rinds and even as a grilled cheese.


This recipe for Pimento Cheese Corn is not only easy to prepare, it’s super quick too! This entire side dish, or dip can be on the table in under fifteen minutes.

Since I posted this video a few days ago, I have received a number of comments (mostly from Southerners), saying they have never heard of Pimento Cheese Corn. Well, that is correct. As mentioned above, I just had a feeling the two would work wonders together. Although, there may be similar recipes out there for a corn dip. Just not one that I found using Pimento Cheese.


If available in your area, I would highly suggest using fresh corn. Get out there and support your local farmer’s market. Just cut the kernels right off the cob with a sharp knife. If you cannot locate fresh corn, substitute with canned corn. In my opinion, white shoepeg corn will be the best alternative. Avoid frozen corn, as the final product may be a bit mushy.

Choose a high-quality Pimento Cheese, or make your own. I believe that Queen Charlotte’s Pimento Cheese Royale is available in a number of states on the east coast. Click here to see where to buy. They use real bacon in the Pimento Cheese I used in this recipe. If you can’t find Pimento Cheese with bacon, just crisp up a few slices of bacon. Chop. Add to the mixture when you add the Pimento Cheese. Next time, I am going to try with their jalapeño.

For a taste of The South, enjoy this Pimento Cheese Corn as a side dish, or dip. It’s super easy to prepare. Your entire Family will ENJOY!


  • 4 ears of fresh corn
  • 1 tsp oil
  • 1/2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tsp paprika
  • 1 TBLS butter
  • 6 oz Pimento cheese with bacon
  • 1 TBLS fresh chopped parsley


  1. Cut the corn off of the cob using a sharp knife.
  2. Heat up the oil in a cast iron pan. 
  3. Add the corn. Season with kosher salt, black pepper and paprika.
  4. Add the butter. Allow the corn to brown up a touch. This should only take a few minutes.
  5. Lower the heat.
  6. Add in the pimento cheese. Allow the cheese to melt, slowly.
  7. Sprinkle on a touch more black pepper.
  8. Garnish with fresh chopped parsley or cilantro.
  9. ENJOY!

Our life has changed dramatically in the past few years with the passing of our two goldendoodles, Vegas and Viva. We were lucky enough to have Vegas for five years (totally wish it was longer). Most recently, losing our Viva to a brain tumor in July of 2020. We welcomed our mini goldendoodle 7, almost seven years ago. We just added the amazing Hazel!
