KETO SAUSAGE BOATS

Ingredients

  • 5 to 6 sausage links, sweet or hot
  • 2 teaspoons olive oil
  • 2 red bell peppers, diced
  • 1 green pepper, diced
  • 2 garlic cloves, minced
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 3/4 Cup ricotta cheese
  • 1 teaspoon nutmeg
  • 2 Tablespoons Parmesan cheese, freshly grated
  • 1/2 to 3/4 Cup marinara sauce
  • mozzarella cheese, shredded
  • fresh chopped parsley, for garnish

Every few months, my Hubby decides he wants to go back on the keto diet. Consequently, I need to become more creative with my meal planning. A few months ago, I saw this post on TikTok from Low Carb State of Mind, for these amazing peppers loaded with grilled peppers and onions, and topped with cheese. So, I thought I would use this as inspiration when creating these Keto Sausage Boats. They were fabulous! If you love this recipe, you need to also try out my Zucchini Boats. Especially, during the summer when you have an overabundance of fresh zucchini, and need ideas on what to do with it.

Although, there are a few steps to this recipe. It’s incredibly quick, and super easy to prepare. Another added bonus, these Keto Sausage Boats are a one-pan wonder. Pair with my Mashed Cauliflower recipe for one amazing meal. Leftovers are even better the next day and can last for up to three to four days in the fridge.

HOW TO PREPARE KETO SAUSAGE BOATS

Preheat oven to 350°. Heat the olive oil in a cast iron pan. If you have not yet invested in a cast iron pan, you need to. Click here for the one I use most often. Cut the sausages lengthwise, without cutting all the way through. We like ours spicy, so I typically always use hot sausage links. Feel free to substitute with mild/sweet. Flatten. Brown in the cast iron pan on both sides. Remove and reserve on a plate.

As the sausages are doing their thing, dice the peppers. Add the diced peppers to the same pan once the sausages have been removed. Season with the kosher salt, black pepper and garlic powder. Cook for a few minutes prior to adding the minced garlic.

In a small bowl, combine the ricotta, nutmeg and Parmesan cheese. Remove the pepper mixture. Add the sausages back to the pan (skin side up). You will notice that when the sausages browned, the skin crinkled up and created a well, or boat. Spoon on a generous amount of the ricotta cheese mixture. Top with a spoonful of your favorite marinara and a generous sprinkle of the shredded mozzarella cheese.

Bake for just about 12 to 15 minutes. Turn on the broiler for the last minute or so, to brown the cheese. As mentioned earlier, serve these incredible Keto Sausage Boats with mashed cauliflower, or steamed vegetables. If you are not following keto, serve with a side of mashed potatoes, or your favorite pasta. ENJOY!
