• 2 heads of cauliflower
  • 1 carton chicken broth or stock
  • 8 oz. block of white cheddar cheese (shredded)
  • 1/2 C grated Parmesan cheese
  • 1/2 C heavy whipping cream
  • 2 TBLS butter
  • Kosher salt/Pepper

Here is my take on a healthier version…well…maybe not super healthy…but a healthier version of mashed potatoes. My Mashed Cauliflower is super tasty and so easy to make. Your family with love the flavor and it will surely become one of your new favorite side dishes! I served mine with cast iron seared chicken breasts coated with JD’s Rub. 

For those of you following the Keto diet…this can be your new go-to…we need something to replace mashed potatoes!

Add broth and cauliflower to pot and bring to just under a boil. Season with salt. Allow to cook for just about 8 to 10 minutes to soften. Drain and add cauliflower back to pot. Add cheddar cheese, whipping cream, Parmesan cheese and butter to pot. Mash with a hand mixer. Season with salt and pepper.

This mashed cauliflower makes for the perfect side dish with your favorite protein…I love it with chicken…salmon…pork…it basically goes with anything! ENJOY!
