MASHED CAULIFLOWER

Ingredients

  • 2 heads of cauliflower
  • 1 carton chicken broth or stock
  • 8 ounces block of white cheddar cheese (shredded)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy whipping cream
  • 1 tablespoon light sour cream
  • 2 tablespoons butter
  • Kosher salt/Pepper

Not only is mashed cauliflower low-carb, and keto-friendly, but it is super tasty. The blend of white cheddar cheese and Parmesan give it a nutty, rich flavor. Here is my take on a healthier version of mashed potatoes. My Mashed Cauliflower is delicious, and so easy to make. Your family with love the flavor. It will surely become one of your new favorite side dishes! Serve it up with your favorite protein. I served mine with cast iron seared chicken breasts coated with JD’s Rub. I have also used as a side for my grilled salmon and pork chops.

Another benefit of this recipe is that it is super quick to prepare. Plan on just about fifteen minutes from prep to plate. Serve this Mashed Cauliflower as an alternative to mashed potatoes for your Thanksgiving Dinner, or as a substitute in my Salisbury Steak dinner. Leftovers are fabulous and can be enjoyed up to two days in the fridge. I have yet to freeze this dish, but I may next time just to see how the cream and cheese hold up. I am going to give it a “no-go” for now. Believe me, this will be gobbled up so fast there may not even be a chance that you will have any left.

HOW TO PREPARE MASHED CAULIFLOWER

Cut the cauliflower into florets. Discard the hard core. Add broth (stock) and cauliflower to pot. Bring to just under a boil. I love using this chicken stock from College Inn. Season with kosher salt. Allow to cook and soften for just about eight to ten minutes. Drain cauliflower (do not rinse) and dumb back into pot. To the same pot, add the cheddar cheese, whipping cream, Parmesan cheese, sour cream and butter. Mash with a hand mixer. Season with a touch of kosher salt and black pepper.

Feel free to change up the cheese blend to your liking. I have found that this combination of cheeses work best. Let me know if you experiment with others. I’m thinking a nice Gruyerè would work well too!

Also, I have never used frozen cauliflower in this preparation. The only problem I could foresee is the consistency of the finished dish. Wondering if it could get a bit mushy? I’m going to stick to fresh, but if you venture into the frozen foods, let me know.

There you have it! Now, wasn’t that super easy? This Mashed Cauliflower can be enjoyed alone or paired with your favorite protein! ENJOY!
