  • 2 heads of cauliflower
  • 1 carton chicken broth or stock
  • 8 oz. block of white cheddar cheese (shredded)
  • 1/2 C grated Parmesan cheese
  • 1/2 C heavy whipping cream
  • 2 TBLS butter
  • Kosher salt/Pepper

Not only is mashed cauliflower low-carb, and keto-friendly, but it is super tasty. The blend of white cheddar cheese and Parmesan give it a nutty, rich flavor. Here is my take on a healthier version…well…maybe not super healthy…but a healthier version of mashed potatoes. My Mashed Cauliflower is delicious, and so easy to make. Your family with love the flavor. It will surely become one of your new favorite side dishes! Serve it up with your favorite protein. I served mine with cast iron seared chicken breasts coated with JD’s Rub. I have also used as a side for my grilled salmon and pork chops.

Add broth (stock) and cauliflower to pot and bring to just under a boil. I love using this chicken stock from College Inn. Season with salt. Allow to cook for just about 8 to 10 minutes to soften. Drain, and add cauliflower back to pot. Add cheddar cheese, whipping cream, Parmesan cheese and butter to pot. Mash with a hand mixer. Season with a touch of kosher salt and pepper.

There you have it! This mashed cauliflower pair well with almost anything! ENJOY!
