GRILLED SWORDFISH WITH MANGO SALSA

Ingredients

  • 2 Swordfish steaks (1" thick)
  • 2 mangos, diced
  • 1 jalapeno, diced
  • 1/4 red onion, diced
  • 1/2 red pepper, diced
  • 1 Roma tomato, diced
  • `2 to 3 Tablespoons fresh chopped cilantro
  • juice of one lime
  • juice of one lemon
  • juice of one orange
  • juice of 1/2 grapefruit
  • 1 Tablespoon light olive oil
  • kosher salt/pepper

So after creating this recipe, I have a new found love for Swordfish. It used to be one of those types of fish that I had to really be in the mood to eat. Not anymore. This recipe for Grilled Swordfish with Mango Salsa is super fresh and super healthy.

This swordfish came direct from the NC coast. Pair with this amazing mango salsa, and you will think you are having dinner on the coast or some far away island!

In a bowl combine the mango, jalapeno, red onion, red pepper, Roma tomato, and cilantro. Season with kosher salt and coarse black pepper. Add the citrus juices and olive oil. Gently mix and taste to see if you need additional salt. Place in fridge for at least 15 minutes.

Heat up the grill. Season the swordfish steaks with a touch of olive oil, kosher salt and pepper. Grill the swordfish for about 4 minutes per side for 1″ thickness. Do NOT overcook your fish!!!

To serve, plate the swordfish on top a bed of rice, or like I did with grilled asparagus. Top with the fresh mango salsa! Check out my recipe for Fish Tacos…you may want to substitute my jalapeño salsa for this one! ENJOY my version of Grilled Swordfish with Mango Salsa.
