Grilling season is here, and there’s no better way to enjoy it than with a delicious and healthy Grilled Steak Board with Chimichurri Sauce. This grilled steak recipe is perfect for feeding a large crowd, but you can easily adjust the ingredient amounts to fit your family size.

This healthy summer recipe is packed with flavor, featuring juicy ribeye steaks, a variety of colorful grilled vegetables, and a vibrant chimichurri sauce that brings everything together.

  • Ribeye Steak: Easily substitute with New York strip, sirloin, flank or filet mignon. Boneless chicken breasts or salmon will also work well in this summertime recipe.
  • Zucchini: Substitute with eggplant or asparagus.
  • Yellow Squash: Substitute with butternut squash, acorn squash or additional zucchini.
  • Bell Peppers: Use your favorite bell peppers, poblano peppers, and/or Anaheim peppers.
  • Additional Vegetables: Feel free to add asparagus, mushrooms, cherry tomatoes, red onion, sweet potatoes or regular potatoes (parboiled and then grilled).
  • Lemon: Chargrill lemon halves for an additional level of flavor.

What is Chimichurri Sauce

Chimichurri Sauce is a vibrant and flavorful Argentine condiment traditionally made with fresh parsley, garlic, olive oil, vinegar and red pepper. It is typically used as a sauce for grilled meats, especially steak, but can also be used as a marinade or dressing.

The fresh and vibrant sauce is known for its bright green color and zesty, herbaceous taste, which adds a fresh and tangy element to various dishes. Variations of a traditional chimichurri sauce may include additional ingredients like cilantro, or fresh lemon juice.

How to Prepare Chimichurri Sauce

Easily, combine all of the ingredients for the chimichurri sauce in a bowl. Here are a few tips:

  • Use Fresh Herbs: Always use fresh parsley (and cilantro, if you prefer) for the best flavor. Fresh herbs give chimichurri its vibrant green color and robust taste.
  • Chopping: Ensure the parsley leaves are finely chopped and the garlic is finely minced.
  • Let it Rest: After preparing the chimichurri sauce, let it sit for at least 15-30 minutes before serving. This resting time allows the flavors to meld together and intensify, resulting in a more flavorful sauce.

How to Prepare a Grilled Steak Board

This recipe provides clear instructions and tips that will help you grill a steak to perfection, ensuring it’s juicy, flavorful and cooked to your desired level of doneness, every single time.

  1. Remove the steaks from the fridge about an hour before grilling. Coat them in olive oil and season with salt and pepper.
  2. Cut the zucchini into 1-inch rounds, the yellow squash into spears, and the bell peppers into 1 1/2 to 2-inch strips.
  3. Add the vegetables to a bowl and toss with olive oil, salt and pepper.
  4. Heat the grill to medium-high. Grill the vegetables first, until they are slightly tender with a bit of crunch. Reserve the vegetables on the top rack of the grill while you grill the steaks.
  5. Turn up the heat to medium-high. Get a nice sear on both sides of the steaks. Move the steaks off the direct heat, place the lid on the grill, and finish to your desired temperature (about 3-4 minutes for medium-rare).
  6. Remove the steaks onto a platter and allow the to rest, tented with foil, for a few minutes.
  7. Scatter the grilled vegetables on the board.
  8. Slice the steak and place it on the board.
  9. Spoon the chimichurri sauce onto the steaks.

Internal Temperature of Steak

It’s important to use a meat thermometer to accurately gauge the internal temperature of the steak for desired doneness. Here are the temperatures typically used to determine the doneness of steak:

  • Rare: 120-130°F (49-54°C)
  • Medium Rare: 130-135°F (54-57°C)
  • Medium: 135-145°F (57-63°C)
  • Medium Well: 145-155°F (63-68°C)
  • Well Done: 160°F and above (71°C and above)

How to Serve and Store a Grilled Steak Board with Chimichurri Sauce

Grilling season is here, and there’s no better way to enjoy it than with a delicious and healthy Grilled Steak Board with Chimichurri Sauce. This healthy steak recipe is a great way to feed a large crowd!


Ingredients

For the Steaks:

  • 4 ribeye steaks
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

For the Grilled Vegetables:

  • 2 medium to large zucchini
  • 3 medium yellow squash
  • 2 red bell peppers
  • 1 yellow or orange bell pepper
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

For the Chimichurri Sauce:

  • 3/4 cup fresh chopped flat-leaf parsley
  • 1/2 cup olive oil
  • 2 tablespoons red wine vinegar
  • 3 garlic cloves, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon dried oregano
  • 3/4 teaspoon coarse salt
  • 1 teaspoon black pepper

Instructions

  1. Remove the steaks from the fridge about an hour before grilling. Coat them in olive oil and season with salt and pepper.

  7. Remove the steaks onto a platter and allow the to rest, tented with foil, for a few minutes.
  8. Scatter the grilled vegetables on the board.
  9. Slice the steak and place it on the board.
  10. Spoon the chimichurri sauce onto the steaks.
  11. Garnish the entire board with fresh parsley and serve with lemon wedges.
