Description

Grilling season is here, and there’s no better way to enjoy it than with a delicious and healthy Grilled Steak Board with Chimichurri Sauce. This healthy steak recipe is a great way to feed a large crowd!


Ingredients

For the Steaks:

  • 4 ribeye steaks
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

For the Grilled Vegetables:

  • 2 medium to large zucchini
  • 3 medium yellow squash
  • 2 red bell peppers
  • 1 yellow or orange bell pepper
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

For the Chimichurri Sauce:

  • 3/4 cup fresh chopped flat-leaf parsley
  • 1/2 cup olive oil
  • 2 tablespoons red wine vinegar
  • 3 garlic cloves, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon dried oregano
  • 3/4 teaspoon coarse salt
  • 1 teaspoon black pepper

Instructions

  1. Remove the steaks from the fridge about an hour before grilling. Coat them in olive oil and season with salt and pepper.
  2. Cut the zucchini into 1-inch rounds, the yellow squash into spears, and the bell peppers into 1 1/2 to 2-inch strips.
  3. Add the vegetables to a bowl and toss with olive oil, salt and pepper.
  4. In a bowl, combine all of the ingredients for the chimichurri and reserve.
  5. Heat the grill to medium-high. Grill the vegetables first, until they are slightly tender with a bit of crunch. Reserve the vegetables on the top rack of the grill while you grill the steaks.
  6. Turn up the heat to medium-high. Get a nice sear on both sides of the steaks. Move the steaks off the direct heat, place the lid on the grill, and finish to your desired temperature. For medium-rare, about 3 to 4 minutes after searing.
  7. Remove the steaks onto a platter and allow the to rest, tented with foil, for a few minutes.
  8. Scatter the grilled vegetables on the board.
  9. Slice the steak and place it on the board.
  10. Spoon the chimichurri sauce onto the steaks.
  11. Garnish the entire board with fresh parsley and serve with lemon wedges.
