These Fluffy Butter Swim Biscuits are light, tender, and golden with that irresistible buttery crust that makes them impossible to resist. With only four simple ingredients, you can have homemade biscuits on the table in about 30 minutes.

These buttery biscuits are perfect for breakfast, brunch, or as a side to just about any meal. This biscuit recipe is adapted from Jess’s original recipe.

  • Butter – Salted (which I used in this recipe) or unsalted, both work. For a different flavor, try browning the butter before pouring it into the baking dish.
  • Add-ins: Easily add cheese, bacon, fresh herbs, seasonings, jalapeños, honey, or chocolate chips to the biscuit dough.

How to Prepare Fluffy Butter Swim Biscuits

  1. In a large mixing bowl, combine the self-rising flour and pinch of salt.
  2. Pour in the cold buttermilk and stir until just combined into a soft dough. Do not overmix.
  3. Melt the butter in the microwave and pour into an 8×8 oven-safe casserole dish.
  4. Spoon the dough evenly over the melted butter. Don’t worry if it mixes with the butter.
  5. Spread out the biscuit dough with a spatula and score into 9 equal squares using a sharp knife. Go over the cuts a second time, if needed.
  6. Bake in a 450°F (230°C) preheated oven for 20–25 minutes, or until golden brown. Insert a toothpick into the center biscuit to ensure it comes out clean.
  7. Remove from the oven and brush the tops with additional melted butter.

How to Serve and Store

  • Serve these fluffy butter swim biscuits straight from the pan, with butter, jam, or honey. They’re also fantastic with sausage gravy, or alongside soups and stews.
  • Store leftovers in an airtight container at room temperature for up to 2 days.
  • Reheat in the oven at 350°F (175°C) for 5–7 minutes.
  • To freeze, wrap the buttery biscuits individually, and freeze for up to 2 months. Reheat from frozen in the oven.

Ingredients

  • Pinch of salt
  • 2 cups cold buttermilk
  • 1 stick (1/2 cup) butter, melted, plus more for basting

Instructions

  1. Preheat oven to 450°F (230°C).

  3. Pour in the cold buttermilk and stir until just combined into a soft dough. Do not overmix.
