There’s something truly magical about biscuits baked in butter. These Fluffy Butter Swim Biscuits are light, tender, and golden with that irresistible buttery crust that makes them impossible to resist. With only a handful of simple ingredients, you can have homemade biscuits on the table in under 30 minutes.


Ingredients

  • 2 1/2 cups self-rising flour
  • Pinch of salt
  • 2 cups cold buttermilk
  • 1 stick (1/2 cup) butter, melted, plus more for basting

Instructions

  1. Preheat oven to 450°F (230°C).
  2. In a large mixing bowl, combine the self-rising flour and pinch of salt.
  3. Pour in the cold buttermilk and stir until just combined into a soft dough. Do not overmix.
  4. Melt the butter in the microwave and pour into an 8×8 oven-safe casserole dish.
  5. Spoon the dough evenly over the melted butter. Don’t worry if it mixes with the butter.
  6. Spread out the biscuit dough with a spatula and score into 9 equal squares using a sharp knife. Go over the cuts a second time, if needed.
  7. Bake for 20–25 minutes, or until golden brown. Insert a toothpick into the center biscuit to ensure it comes out clean.
  8. Remove from the oven and brush the tops with additional melted butter.
  9. Allow to cool slightly before serving warm.

  • Use cold buttermilk for best results.
  • Don’t skip brushing with extra melted butter—it makes the tops glossy and flavorful.
  • A glass or ceramic dish works best for even browning.
