FANCY! Do you not just love this word? Honestly, the end result may look super fancy, but getting there may be a bit of a chore. It’s quite possible, you will end up with a bit of egg yolk mixture all over you. However for me, it was probably due to the fact that I was shooting a video, and taking photos at the same time. Who cares anyway. These Fancy Deviled Eggs are fabulous, and so worth any mess you may make.
So, if you take a peek at one of my latest recipe for Spicy Tuna Crispy Rice Squares, you will notice I created a version using Highland & Menlo Osetra Caviar. Since I had a bit of caviar leftover, I decided to create this recipe for Fancy Deviled Eggs using the caviar and smoked salmon. Of course, I went a little overboard and made fancy cups out of the egg whites. Believe me, you do not have to do this. Cutting the egg white in the more traditional way will work just fine.

HOW TO MAKE THE MOST PERFECT BOILED EGGS
First and foremost, I think we need to talk about how to make the most perfect hard boiled eggs for deviled eggs. Meaning, how to cook them so that the shell peels off easily. Well, you probably have heard (and maybe even tried) using baking soda in the water and/or old eggs will do the trick. I swear, no matter what I put in the water or what kind of eggs I use, they are always so freaking hard to peel. So, when I found this Egg Cooker from Dash a few months ago, I thought I would give it a go. Not only are the eggs finished in record time, but they peel so easily. For reals! Additionally, this egg cooker allows you to make soft boiled, poached, scrambled, or even an omelette. Definitely worth the under $20 price point.
I would also like to mention, that I used a combination of both duck, and extra large organic chicken eggs. Basically, I only did this for my own research. The duck eggs are by far much larger in size. In my opinion, duck egg yolk is also much richer than chicken. Even though, the duck eggs made for a much sturdier cup, the yolk was a bit more difficult to release from the white. You have to really get in there with a spoon or knife to scrape it all out.
Feel free to use whatever type egg you wish. This recipe is for a dozen eggs which will yield either twelve egg cups or twenty-four of the more traditional deviled eggs. Do not fret if you break a few egg whites along the way. Believe me, I messed up a few. Thankfully, my Hazel was eager enough to not let them go to waste.
HOW TO MAKE FANCY DEVILED EGGS
Hard boil the eggs. Do you, or use my method. My method also includes placing the hard boiled eggs into a cold ice bath for a few minutes prior to peeling. To make egg cups, slice the end of an egg and hollow out the yolk into a bowl. Shave off just a touch of the white at the bottom to keep the egg cup from falling over. This is where it gets a bit tricky. Sometimes you will cut the right end and, other times, the wrong end. You will know what I’m talking about. Believe me.
Honestly, if you do not feel like making fancy egg cups, just cut slice the eggs the traditional way. Add the Miracle Whip, mayo, sour cream, dijon mustard, Worcestershire sauce, kosher salt and black pepper to the egg yolks. Go easy on the kosher salt as the caviar and smoked salmon can be rather salty. Yes, I used a combination of both Miracle Whip and mayo. I really enjoyed the flavor combination. To make the yolk mixture super creamy and free from lumps, blend well with a hand mixer. If the mixture seems a little dry, just add in a touch more Miracle Whip, mayo, or sour cream.
Place the egg white cups onto a platter. As mentioned above, shave off just a bit of the bottom to keep them from falling over. Fill a pastry bag, fit with a decorating tip, with the creamy egg yolk mixture. If you do not have a pastry bag, place the mixture into a freezer bag and snip off one of the bottom corners. Filling the bag and egg cups is for sure the messiest part of this entire process. As an alternative, just spoon the mixture into the egg cups. Fill as high as you can.
Place a small twirl of smoked salmon into the creamy egg yolk mixture. Top with a touch of caviar. Garnish each Fancy Deviled Egg with a fresh parsley leaf. ENJOY!
