POACHED EGGS WITH SMOKED SALMON TOAST POINTS

Ingredients

  • 4 large eggs
  • 4 ounces smoked salmon
  • 1 Tablespoon white vinegar
  • 2 slices bread (toasted)
  • Kosher salt/Pepper
  • Everything but the bagel seasoning blend (optional)

Good morning! Yearning for something different on your breakfast or brunch table? I ran across this recipe for Poached Eggs with Smoked Salmon Toast Points from Food and Wine a few years ago. It is one of my favorites. Quite often, smoked salmon will be served with minced hard-boiled eggs. Serving it up with a runny yolk will change your world.

Here is my version of Poached Eggs with Smoked Salmon. It is slightly easier to prepare. Well, except for the damn egg poaching part. It does take practice. I have definitely messed it up many times.

Today, I did not. So, I will try and give you the low-down. The step-by-step process on how to poach an egg perfectly. Don’t get frustrated. Practice makes perfect! Just be sure to have a few extra eggs at the ready!

ALTERNATIVE METHOD

If you are really struggling with poaching eggs, or you want an alternative to this recipe instead of frying the eggs. Try using this egg cooker. I recreated this recipe a few days ago. Not only do I love how easy it was to prepare a soft egg, but look at the presentation. These egg cups are adorable. The egg cups came with their own egg cracker, too!

The egg cooker is super easy to use. Punch a hole in the top of the egg with the device provided. Fill water cup to the “soft egg” level. Place lid. Timer will buzz when the egg is a perfectly soft-boiled.

HOW TO MAKE POACHED EGGS WITH SMOKED SALMON TOAST POINTS

Bring a pot of water to a boil. Toast the bread and cut into strips. Wrap a slice of the smoked salmon around each strip and set aside.

In a small bowl, crack one egg. Add the vinegar to the pot. Swirl the water and gently drop in the egg. You will see the white part of the egg curl around the yolk. Try not to have the water at a full-on boil. As soon as the white starts to stiffen (about 3 minutes), remove the egg from the pot with a slotted spoon and allow to drain on a paper towel. I typically do two eggs at a time.

Don’t worry if your poached eggs do not come out perfectly the first time. There seems to be somewhat of an art to poaching eggs. The key is to just keep practicing.

Place the poached eggs in a bowl with two to three pieces of the Smoked Salmon Toast. Break the eggs. Season with kosher salt and pepper. Start dipping away!!! You are going to love this combination and recipe for Poached Eggs with Smoked Salmon Toast Points.
