Cannellini Beans – To thicken the stew, add one can directly to the pot without draining or rinsing. Navy beans or Great Northern Beans are great substitutions.

Hot Sausage – Link sausage out of the casing works best. Substitute with ground, if you prefer. If you do not enjoy the heat, use mild sausage, ground beef, or even ground turkey.

Vegetables – This stew is simply made with onions, garlic and fresh spinach. Feel free to add minced celery and/or carrots. However, you may have to adjust the cooking time, or add as you are browning the sausage.

Whole Tomatoes – Substitute canned, whole tomatoes with canned, diced or crushed. Fresh tomatoes can also be used. Note, you will probably not need all of the sauce from the can.

Herbs – Add your favorite blend of herbs. Rosemary would work really well in this Sausage and Bean Stew.

HOW TO SERVE CANNELLINI BEAN SAUSAGE STEW

The hearty stew can be served as a complete meal on its own, eliminating the need to prepare additional side dishes. However, you can also pair it like I did ladled over warm mashed potatoes.

HOW TO STORE CANNELLINI BEAN STEW

  1. Storage: Allow the stew to cool completely before transferring it to an airtight container. Refrigerate for up to 3-4 days. Alternatively, you can freeze the stew for up to 3 months, ensuring it is stored in a freezer-safe container.

Ingredients

Scale
  • 2 cans cannellini beans, one can drained and rinsed
  • 1 pound hot sausage links
  • 1 package prepared mashed potatoes (optional)
  • 1 tablespoon olive oil
  • 1 28-ounce can whole tomatoes, reserve most of the sauce (use only if the stew seems too thick)
  • 4 garlic cloves, minced
  • 1/4 white onion, minced
  • 2 cups fresh baby spinach
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley

Instructions

  • Heat the olive oil in a heavy bottom pot.
  • Remove the sausage from the casings and add to the pot. Break apart.
  • Once the sausage is almost fully cooked, add in the minced onion and garlic. Cook for another minute, or two.
  • Add in the tomatoes. Season with salt and pepper.
  • Crush the tomatoes and allow everything to simmer for at least 10 minutes. 
  • Add in the spinach and cannellini beans. 
  • Stir gently and allow the beans to warm through, about another 5 minutes. 
  • Garnish with fresh parsley.
  • Serve alone, or on top of mashed potatoes.
  • ENJOY!

  • you will not use all of the sauce in the canned tomatoes

HOW TO PREPARE PICKLED STRAWBERRIES

First, you’ll need to gather your ingredients, including fresh, ripe strawberries from your local farmers market, balsamic vinegar, a fresh jalapeño, maple syrup and black peppercorns. The strawberries should be washed, hulled and cut in half.

Prepare the pickling brine by combining white balsamic vinegar, water, maple syrup and salt. Heat the mixture to just under a boil, allowing the salt to dissolve and the flavors to meld together. Taste the brine as it simmers and adjust the levels of sweetness to suit your preference.

Once the brine is ready, it’s time to add the strawberries, sliced jalapeños and black peppercorns to a clean, sterilized jar. A canning jar, or jars work great. For this recipe, use a 1-quart jar, or two pint jars. If using another type of jar, be sure it’s a heatproof jar.

Fit snugly without being too tightly packed. Carefully pour the hot brine over the strawberries, ensuring they are completely submerged. Leave a small headspace at the top of each jar to allow for expansion during the pickling process.

Seal the jars tightly and cool to room temperature before placing in the fridge. Quick Pickled Strawberries can be enjoyed within an hour after placing in fridge. However, the longer the pickling time, the more pronounced the flavors will become.

Whether you’re looking to enhance your charcuterie board, add a zesty element to salads, or experiment with unconventional flavor pairings, these Spicy Pickled Strawberries are a perfect choice. Easily, your new favorite condiment.


Ingredients

Scale
  • 1 pound fresh strawberries (rinsed, hauled and halved)
  • 1 jalapeño, sliced thin
  • 1 to 2 teaspoons whole black peppercorns
  • 1 1/2 cups white balsamic vinegar
  • 3 tablespoons maple syrup
  • 2/3 cup water
  • 2 teaspoons salt

Instructions

  1. Rinse, hull and halve the strawberries.
  2. In a saucepan, combine the vinegar, water, salt and maple syrup.
  3. Heat on medium to medium-high until the salt dissolves. Do NOT boil. Stir often to ensure the maple syrup does not burn.
  4. In a sterile, clean jar, start layering the strawberries with the jalapeño slices and black peppercorns.
  5. Fill the jar with the pickling liquid and allow to cool. 
  6. Place in fridge for at least an hour.
  7. ENJOY in your favorite preparation. 

Notes

  • Stir the pot often to ensure the maple syrup does not stick, or burn. 
  • Use clean, sterilized jars with tight fitting lids (1 quart or two, 1 pint jars)
  • Pickled strawberries can be used within an hour after placing in fridge.
  • The longer the strawberries pickle, the more pronounced the flavor.
  • Use leftover vinegar to make a quick strawberry vinaigrette.
