This hearty and comforting Cannellini Bean Sausage Stew combines the creamy goodness of cannellini beans with the bold flavors of hot sausage. - 2 cans cannellini beans, one can drained and rinsed
- 1 pound hot sausage links
- 1 package prepared mashed potatoes (optional)
- 1 tablespoon olive oil
- 1 28-ounce can whole tomatoes, reserve most of the sauce (use only if the stew seems too thick)
- 4 garlic cloves, minced
- 1/4 white onion, minced
- 2 cups fresh baby spinach
- 1/2 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons fresh parsley
Instructions
- Heat the olive oil in a heavy bottom pot.
- Remove the sausage from the casings and add to the pot. Break apart.
- Once the sausage is almost fully cooked, add in the minced onion and garlic. Cook for another minute, or two.
- Add in the tomatoes. Season with salt and pepper.
- Crush the tomatoes and allow everything to simmer for at least 10 minutes.
- Add in the spinach and cannellini beans.
- Stir gently and allow the beans to warm through, about another 5 minutes.
- Garnish with fresh parsley.
- Serve alone, or on top of mashed potatoes.

- sausage in casing has more flavor than ground
- you will not use all of the sauce in the canned tomatoes
- serve alone or with suggestions in post
