Description

This hearty and comforting Cannellini Bean Sausage Stew combines the creamy goodness of cannellini beans with the bold flavors of hot sausage. Ingredients

  • 2 cans cannellini beans, one can drained and rinsed
  • 1 pound hot sausage links
  • 1 package prepared mashed potatoes (optional)
  • 1 tablespoon olive oil
  • 1 28-ounce can whole tomatoes, reserve most of the sauce (use only if the stew seems too thick)
  • 4 garlic cloves, minced
  • 1/4 white onion, minced
  • 2 cups fresh baby spinach
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley

Instructions

  • Heat the olive oil in a heavy bottom pot.
  • Remove the sausage from the casings and add to the pot. Break apart.
  • Once the sausage is almost fully cooked, add in the minced onion and garlic. Cook for another minute, or two.
  • Add in the tomatoes. Season with salt and pepper.
  • Crush the tomatoes and allow everything to simmer for at least 10 minutes. 
  • Add in the spinach and cannellini beans. 
  • Stir gently and allow the beans to warm through, about another 5 minutes. 
  • Garnish with fresh parsley.
  • Serve alone, or on top of mashed potatoes.
  • ENJOY!

Notes

  • sausage in casing has more flavor than ground
  • you will not use all of the sauce in the canned tomatoes
  • serve alone or with suggestions in post
  • top freshly grated Parmesan cheese as an additional flavor element
