- 1 pound ground beef
- 1 package ground meatloaf meat mix (beef, pork, and veal combination)
- 3 slices bread without the crusts
- 2/3 cup heavy whipping cream
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 white onion, minced
- 1 carrot, minced
- 1/2 cup ketchup, plus
- 1 tablespoon yellow mustard
- Few dashes of Worcestershire sauce
- 2 tablespoons fresh chopped parsley
Instructions
- Preheat the oven to 375°F (190°C) and line the bottom of a cast iron pan or baking dish with olive oil.
- Tear the bread into small pieces and add them to a bowl with the heavy cream. Allow the bread to soak up the cream for a few minutes.
- Add all of the ground meat to the bowl with the bread.
- Season with salt, pepper, garlic powder and onion powder.
- Add in the minced carrot and onions, ketchup, mustard, Worcestershire sauce and fresh parsley.
- Mix gently to combine, being careful not to overmix.
- Form the meat mixture into two small loaves or one large loaf.
- Place the meatloaves in the pan and bake for 30-35 minutes, or until cooked through.
- Remove from the oven and drain any excess grease.
- Drizzle the top with ketchup, and return to the oven for an additional 5 minutes.
- Allow to rest a few minutes before slicing.

Notes
- Easily use all ground beef, instead of the addition of the meatloaf meat mixture.
- For a leaner meatloaf, use ground turkey (may not be as tender and juicy).
- If you want to replace the bread with breadcrumbs, do NOT mix the breadcrumbs with the heavy cream. Add the breadcrumbs with the other ingredients and incorporate an egg.
- Try not to over mix the meat as this can cause the loaves to become too dense and you may lose the tender and fluffy texture while baking.
- Form meat mixture into smaller loaves for a quicker and more even bake.
- Allow the meatloaf to rest for a few minutes before slicing.
- Leftovers will keep in the fridge for up to 4 days.
