Description
This Sausage and Potato Chowder is a rich and comforting dish perfect for a cozy evening. Combining spicy sausage, tender potatoes, and creamy broth, this chowder is easy to make and full of delicious flavors that everyone will love.

- 1 pound Italian hot sausage links
- 2 russet potatoes, peeled and diced tiny
- 1/4 white onion, minced
- 1 celery stalk plus leaves, minced
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon fresh or dried thyme
- 3 tablespoons flour
- 3 1/2 cups chicken stock
- 2 bay leaves
- 2 cups baby spinach
- 1 cup heavy whipping cream
- Freshly grated Parmesan cheese, for garnish
- Cracked black pepper, for garnish
Instructions
- Remove the sausage from the casings and break apart in a large soup pot.
- While the sausage is browning, peel the potatoes and cut into a tiny dice. Mince the onion, celery and garlic.
- Once browned, add the minced celery, onion and garlic to the pot, along with the diced potatoes.
- Season with salt and pepper. Add in the thyme. Stir to coat the vegetables in the sausage grease.
- Sprinkle in the flour. Stir to coat everything in the flour. Allow the raw flour taste to cook off for a few minutes.
- Pour in the chicken stock and add the bay leaves. Bring to a boil, then reduce heat and allow to simmer until the potatoes are tender, about 10-12 minutes.
- Remove the bay leaves.
- Stir in the spinach.
- Mix in the heavy whipping cream. Simmer for another 5 minutes to slightly thicken.
- For even more thickness, smash some of the potatoes against the side of the pot.
- Ladle into bowls garnished with Parmesan cheese and cracked black pepper.

Notes
- Easily replace link sausage with bulk.
- For less heat, use mild or sweet Italian sausage.
- Simmer just long enough for the potatoes to become tender. Overcooking can cause the potatoes to turn mushy.
- For a thicker chowder, smash a few of the potatoes against the side of pot.
