Description

Italian Sausage and Peppers made with hot sausage, sautéed bell peppers and onions, and melted mozzarella for an easy one-pan dinner or sandwich.


Ingredients

  • 1 pound hot Italian sausage links (about 56 links) 
  • 1 tablespoon olive oil
  • 3 bell peppers, cut into strips (mix of colors for best flavor)
  • 1/2 white onion, thinly sliced
  • Pinch of salt
  • 68 ounces shredded mozzarella cheese
  • Hoagie rolls or buns, optional for serving

Instructions

  1. Heat a tablespoon of olive oil in a cast iron pan over medium heat.
  2. Add the sausage links and sear on all sides until nicely browned.
  3. Reduce the heat to medium-low. Cover, and cook until the sausages are cooked through.
  4. Add the sliced bell peppers and onions to the pan along with a pinch of salt.
  5. Sauté the vegetables until they reach your desired tenderness, stirring occasionally.
  6. Remove the sausages from the pan and set aside.
  7. Sprinkle the shredded mozzarella cheese over the peppers and onions.
  8. Cover the pan and allow the cheese to melt.
  9. Serve the sausages topped with the cheesy peppers and onions, or slice the sausages in half lengthwise.
  10. Place the sausage into buns, then top with the cheesy pepper and onion mixture.

  • Covering the pan helps cook the sausage through, while keeping it juicy.
  • Let the peppers and onions cook undisturbed at times for better caramelization.
