- 10–12 ounces of your preferred pasta
- 1 tablespoon olive oil
- 2 tablespoons butter
- 1 small shallot, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon crushed red pepper flakes (optional)
- 4-ounces tomato paste
- 3 tablespoons vodka
- 3/4 cup heavy cream
- 1 ladle pasta water
- 1/2 cup freshly grated Parmesan cheese, plus more for garnish
- 2 tablespoons fresh basil, finely chopped, plus more for garnish
Instructions
- Start the pasta cooking in salted, boiling water.
- In a large skillet, heat the olive oil and butter over medium heat.
- Add the minced shallot and garlic. Season with salt and pepper. Add crushed red pepper flakes, if desired.
- Sauté for a minute or two, until softened.
- Stir in the tomato paste, allowing it to cook for 2-3 minutes to enhance flavors.
- Pour in the vodka, letting it simmer for another 2-3 minutes to cook off the alcohol.
- Pour in a ladle of the pasta water.
- Lower the heat and incorporate the heavy cream.
- Stir in the Parmesan cheese and fresh basil.
- Transfer the pasta directly from the pot to the sauce. Toss to coat.
- Serve hot, garnished with additional Parmesan and basil.

Notes
- Use your favorite pasta shape.
- Don’t forget to salt the water for the pasta.
- Depending on the size of the pasta, start boiling at any point to ensure the pasta is al dente when transferring to the sauce. Try not to overcook the pasta.
- Allow the tomato paste to cook for a few minutes.
- Be sure to cook off the the alcohol.
- Add a ladle or more of the pasta water to enhance the flavor and texture of the sauce.
- Turn down the heat prior to adding the heavy cream.
- Transfer the pasta directly from the pot into the sauce.
