- 2 boneless chicken breast
- 1/2 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 3 eggs
- 1 tablespoon milk
- 1 1/2 cups freshly grated Parmesan cheese, plus more for garnish
- 1/2 cup flour
- 1/2 cup oil for frying
- 4 tablespoons butter
- 1 tablespoon fresh chopped parsley, for garnish
Instructions
- Cut each chicken breast horizontally into thin cutlets (this should yield 4 to 6 cutlets depending on the size of the breasts).
- Season each cutlet on both sides with salt, black pepper, garlic powder and onion powder.
- In a bowl, whisk together the eggs and milk.
- On a plate, combine the Parmesan cheese and flour.
- Heat the oil and butter in a non-stick pan to medium/medium-high.
- Place a chicken cutlet into the egg mixture. Allow any excess to drip off.
- Add to the Parmesan mixture. Pat down to fully coat both sides.
- Finish dredging the remaining chicken cutlets.
- Place two to three pieces of the chicken in the hot oil and do not touch until ready to flip (about 4 minutes).
- Once the coating is golden brown and crispy, flip and continue frying until golden and cooked through (another 2 to 3 minutes).
- Repeat with the remaining chicken cutlets.
- Place chicken on a platter garnished with freshly grated Parmesan cheese and fresh chopped parsley.

Notes
- As an alternative to slicing, and as a time-saver, purchase thinly sliced chicken breasts.
- For a more even coating, grate the Parmesan cheese with a lemon zester.
- Press the chicken into the Parmesan mixture to fully coat.
- Use a non-stick pan to ensure the chicken does not stick to the bottom.
- Try not to touch the chicken as it’s frying to prevent the coating from falling off.
- Do NOT overcrowd the pan when frying. Fry in batches.
- The temperature of the oil/butter needs to be at a medium/medium-high to ensure the chicken fully-cooks and the Parmesan cheese does not burn.
- Store leftovers by wrapping tightly and placing in the fridge for up to 4 days.
