Crispy Parmesan Fried Chicken Cutlets

This Crispy Parmesan Fried Chicken recipe is a testament to the power of simple ingredients elevating a classic dish into something extraordinary. Imagine a tender, seasoned chicken cutlet, carefully coated in a blend of freshly grated Parmesan cheese, then fried to a perfect golden crispness.


Ingredients

  • 2 boneless chicken breast
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 3 eggs
  • 1 tablespoon milk
  • 1 1/2 cups freshly grated Parmesan cheese, plus more for garnish
  • 1/2 cup flour
  • 1/2 cup oil for frying
  • 4 tablespoons butter
  • 1 tablespoon fresh chopped parsley, for garnish

Instructions

  1. Cut each chicken breast horizontally into thin cutlets (this should yield 4 to 6 cutlets depending on the size of the breasts).
  2. Season each cutlet on both sides with salt, black pepper, garlic powder and onion powder.
  3. In a bowl, whisk together the eggs and milk.
  4. On a plate, combine the Parmesan cheese and flour. 
  5. Heat the oil and butter in a non-stick pan to medium/medium-high.
  6. Place a chicken cutlet into the egg mixture. Allow any excess to drip off.
  7. Add to the Parmesan mixture. Pat down to fully coat both sides.
  8. Finish dredging the remaining chicken cutlets.
  9. Place two to three pieces of the chicken in the hot oil and do not touch until ready to flip (about 4 minutes).
  10. Once the coating is golden brown and crispy, flip and continue frying until golden and cooked through (another 2 to 3 minutes).
  11. Repeat with the remaining chicken cutlets.
  12. Place chicken on a platter garnished with freshly grated Parmesan cheese and fresh chopped parsley.

Notes

  • As an alternative to slicing, and as a time-saver, purchase thinly sliced chicken breasts.
  • For a more even coating, grate the Parmesan cheese with a lemon zester.
  • Press the chicken into the Parmesan mixture to fully coat.
  • Use a non-stick pan to ensure the chicken does not stick to the bottom.
  • Try not to touch the chicken as it’s frying to prevent the coating from falling off. 
  • Do NOT overcrowd the pan when frying. Fry in batches.
  • The temperature of the oil/butter needs to be at a medium/medium-high to ensure the chicken fully-cooks and the Parmesan cheese does not burn.
  • Store leftovers by wrapping tightly and placing in the fridge for up to 4 days.
